2 medium-sized eggplants
2 cups of breadcrumbs (seasoned or plain)
1 cup of grated Parmesan cheese
2 cups of marinara sauce
2 cups of shredded mozzarella cheese
1 teaspoon of dried basil
1/2 teaspoon of garlic powder
Salt and pepper to taste
Cooking spray
INSTRUCTIONS:
Prep the Eggplant:Start by slicing the eggplants into 1/4-inch thick rounds.
Lay the slices on a clean kitchen towel or paper towels and sprinkle with salt to draw out excess moisture. Let them sit for 20-30 minutes.
Coat with Breadcrumbs:In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, dried basil, garlic powder, and a dash of salt and pepper.
Dip each eggplant slice into the breadcrumb mixture, ensuring it's evenly coated. Shake off any excess.
Preheat the Air Fryer:Preheat your air fryer to 375°F (190°C) for a few minutes.
