🧁🍓 Strawberry Crunch Cupcakes 🍓🧁
Ingredients:
For the Cupcakes:
1 box strawberry cake mix
Ingredients required on the cake mix box (typically eggs, oil, and water)
For the Frosting:
1 package (8 ounces) cream cheese, softened
½ cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
For the Strawberry Crunch Topping:
20 golden sandwich cookies, crushed
1 package (3 ounces) strawberry gelatin mix
4 tablespoons unsalted butter, melted
Directions:
Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
Prepare the Cupcake Batter: Mix the strawberry cake mix according to the package instructions.
Bake the Cupcakes: Fill each cupcake liner about ⅔ full with batter. Bake according to package directions, usually 18–22 minutes, or until a toothpick inserted into the center comes out clean.
Cool Completely: Allow the cupcakes to cool completely before frosting.
Make the Frosting: In a large bowl, beat together the softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy.
Prepare the Crunch Topping: In a medium bowl, combine the crushed golden sandwich cookies, strawberry gelatin mix, and melted butter. Mix until crumbly.
Frost the Cupcakes: Pipe or spread the cream cheese frosting generously onto each cooled cupcake.
Add Crunch Coating: Sprinkle or press the strawberry crunch topping over the frosted cupcakes until well coated.
Serve: Enjoy immediately or refrigerate until ready to serve for a cool, creamy treat.
