Today was such a special day for our sweet Simon 🤍

He received his First Holy Communion, and my heart is just so full. Watching him take this next step in his faith and receive Jesus for the very first time is something I will never forget. I am so incredibly proud of him for preparing his heart and saying “yes” to this beautiful sacrament.

The Mass today was also for my dad, which was extra special today, I felt like he was there with us. I know without a doubt how proud he would be of Simon. 🤍

Simon, we love you so much and are so proud of the young man you are becoming. May you always stay close to Jesus and continue to grow in your faith 🙏

Can I be honest? There was a season I dreaded walking into my own kitchen.

There was a season when I dreaded walking through the door after work. Not because I didn’t want to see my kids, but because I knew the moment I stepped inside, someone would ask, “What’s for dinner?” And I had absolutely no answer.

Seven kids. All hungry. All at once. And there I was, staring into the fridge, hoping for inspiration.

That version of me needed someone to say: it doesn’t have to be this hard.

Not a 47-step meal plan. Not a $200 grocery haul. Just a simple system.

Here’s what changed everything for me:
✅ I pick 5 meals for the week (that’s it — we repeat favorites, and nobody complains)
✅ I prep the basics on Sunday in about an hour (protein, rice or pasta, chopped veggies)
✅ I keep 3 freezer meals in rotation for the nights that go sideways
✅ I use tools that actually make prep faster (not gadgets that collect dust)

It’s not perfect. Some nights it’s still scrambled eggs. But most nights? Dinner is handled before the chaos even starts.
