We're open for the season! We currently have tomatoes, grape tomatoes, cucumbers, kohlrabi, zucchini, green beans, bell peppers, hot peppers, red potatoes & strawberries. We also have fresh chard, basil, cilantro, sage, tarragon & chives available upon request. And sweet corn is about 1-1/2 weeks out, yet 😀

Crisp Cucumber Salsa

Here's another tasty fresh salsa and a great way to use up some cucumbers...

I had this yummy fresh salsa at a friend's party and I begged her for the recipe:

1/2 cup sugar
1/2 cup olive oil
1/2 cup apple cider vinegar
1 (15oz) can corn with diced peppers (drained & rinsed)
2 (15oz) cans black beans (drained & rinsed)
2-3 celery stalks, chopped
1 small red onion, chopped
1/4 - 1/2 cup fresh cilantro, chopped
1 jalapeno, seeded and chopped
Bring the sugar, oil & vinegar to a boil and set aside to cool. Prepare the other ingredients and mix every together. Serve with tortilla chips.

Chard "Lasagna"

Ingredients:
Butter
Thinly sliced potatoes (about 1 dry qt.)
1 Bunch Chard Greens
Swiss or Gruyere Cheese
Dried Thyme
Salt & Pepper
3/4 c. Milk
Parmesan Cheese

Directions:
In a greased 9-by-13-inch pan, layer slices of potato to cover the bottom of pan. Sprinkle with salt, pepper and a little chopped butter. Top with 1/3 of the chard. Layer with grated Gruyere or Swiss cheese, a pinch of thyme, and more salt, pepper and butter. Repeat twice with the remaining potato slices and chard, then end with potatoes. Pour the milk over the top (pan will seem very full, but it will cook down), cover with foil and bake at 350 degrees until tender, about an hour. Top with last of the Gruyere or Swiss cheese and some Parmesan, and broil until cheese is melted and golden.
