🌿 Let’s Talk About Raw Honey & Crystallization (Because There’s a Lot of Misinformation Out There!)
I’ve seen a graphic circulating again that claims “if your honey isn’t crystallized, it’s not raw.”
As beekeepers, we want to clear this up in a friendly, factual way — because this myth causes a lot of confusion.

💛 Here’s the truth: Raw honey can be liquid OR crystallized. Both are completely natural.
Crystallization has nothing to do with whether honey is raw, heated, processed, or “real.”
Honey crystallizes based on:

-The nectar source
-The glucose/fructose ratio
-Storage temperature
-Time

That’s it.

🍯 Why some raw honey stays liquid longer
Honeys like gallberry, tupelo, and acacia naturally stay liquid much longer because they’re higher in fructose.
Honeys like clover or canola crystallize quickly because they’re higher in glucose.

Both are raw. Both are natural. Both are delicious.

🔥 What DOESN’T determine rawness
The appearance of the honey in your jar.

Liquid honey does not mean it’s been heated or processed.
Crystallized honey does not mean it’s “more raw.”
