Every geode cake starts days before I even turn the oven on.
While the video shows the carving and painting, what you don’t see is the waiting game. I hand-poured this batch of Kohakutou, shaped every individual crystal, gilded the edges, and then let them sit to cure so they get that signature delicate crunch with a soft jelly center.
By the time I actually start baking the cake tiers, I’ve already put hours into sculpting the crystals alone. It’s a slow, precise process, but there’s nothing quite like watching a pile of sugar turn into a piece of art.
