Happy Mother’s Day! Maple cream makes a sweet treat for Mother’s Day or any occasion! 🍁 You can find 1 lb and half pound tubs available in our farm store 😊. We sell these from our freezer, but they keep well in the refrigerator for a softer cream consistency. Maple cream is made from 100% pure maple syrup, no added ingredients.

We are so back! (On pasture) 🤗🌱 While it’s earlier than we expected to do it, we turned the cows out to green grass for the first grazing of the year today! We are reintroducing the pasture gradually, using what we call our “sacrifice pasture” that is a little less lush and a less important pasture for our grazing rotation. This way, they will enjoy some fresh grass while continuing to receive the haylage and dry hay they ate all through the winter, giving their rumen/stomach a chance to adjust to their new, seasonal diet 🥰.

Copy > paste 🥰. I just love when unique markings show up in calves. This little heifer was born on St. Patrick’s Day, and since we already have a Patty, we’re calling her Clover 🍀. This first-time mama cow is one of our Jersey x Hereford crosses that we got from our wonderful neighbor Luke a few years ago, and the calf is half Angus from an AI sire (not ChatGPT 🤖). While our genetic mixes are a bit unconventional for a beef herd, one benefit of the dairy cow influence is that our mothers make a LOT of milk and these calves eat well! 🥛

The sap dawgs are hard at work in the sugar house boiling hundreds of gallons of sap into pure maple syrup! 🍁 Find the first batches of 2026 syrup in the self-serve farm store, open daily 9-7 at 340 West Road in Fort Ann. We currently have an assortment of beef, including our best-selling ground beef, steaks, roasts and stew meat, and various cuts of pork and lamb. We take credit card, Venmo, checks and exact cash 😊.

I’m honored to have our farm’s story featured by Food Tank sharing my experience as a fourth generation farmer forging a new path. Back in September, I stepped out of my comfort zone to speak on-stage with Food Tank in New York City, telling my story alongside amazing farmers from across the country. All of these stories matter and are crucial for understanding our food system and the people at its core.

A fourth-generation farm, a new path forward.

After years of watching her parents struggle with the economics of small-scale dairy, Olivia Fuller stepped in to help transform Fuller Acres in upstate New York. By protecting the land through a conservation easement and shifting from dairy to diversified livestock and direct sales, her family found a way to keep the farm alive for the next generation.

“We had already lost so much, and I couldn’t stand to see Dad lose the farm.”

🍁 Maple Cream is now available in the farm store! 🍁 Dad has been busy working on a few batches of pure maple cream, carrying on a tradition my grandma Beverly started decades ago. If you’ve never had it before, you’re in for a treat! We like to spread it on toast and waffles, but there are countless ways to enjoy it, including by the spoonful 😋. Maple cream is made with 100% pure maple syrup, cooked and stirred to the cream consistency with no added ingredients. Cream must be kept refrigerated or frozen. Find it for $15/lb in our farm store freezer or send us a message to order!

Cold, snowy days are perfect for slow cooked roasts! I made this beef bourguignon yesterday, my first ever attempt at the infamous Julia Child dish. I did not follow the full, original recipe, but I’m overall pleased with the final result! I’m making an effort this year to develop my kitchen confidence and cook a variety of dishes using all the cuts of our Fuller Acres farm raised beef. I’m planning to make this a series, so I hope you’ll follow along and take inspiration for cooking with local meat! 🥩🍽️

Beef Bourguignon (Beef Burgundy) 🍷
Beef cut: Chuck roast (bone-in)
Cooking methods: Braising in Dutch oven
▪️Season and sear the beef
I started by searing the chuck roast in my Dutch oven on the stovetop using canola oil — the original recipe calls for bacon and sears the beef in the leftover bacon grease or lard, which I think would have been better. I was out of bacon, so oil had to do. I did add too much to the pot and had to safely discard the excess between searing the meat and sauteeing my onions and carrots.
▪️Sauté the veggies (onions, carrots, and garlic at the end) and add beef back into the pot. Sprinkle some flour on the meat and veggies and stir.
▪️Add 2-3 cups of beef stock and 2-3 cups of red wine to cover 1/2 of the roast. I used 2 cups of beef stock that I had frozen and thawed in a Mason jar and 3 cups of Merlot wine, but I could have used a little more stock or water, mine came out pretty thick. I also added dried parsley and bay leaves but the recipe called for fresh herbs.
▪️ Transfer the pot to the oven: I set mine at 350 for 3 hours, which might have been hotter than I needed, or longer. I got busy and didn’t check it at 2 hours. I’d suggest checking it at least once.
▪️In the final 1/2 hour of cooking, I made mashed potatoes on the stovetop and I sautéed white button mushrooms and garlic in butter.
▪️Remove the pot from the oven and simmer on the stovetop, removing the bone (the meat should fall right off.) This is when I added the mushrooms and garlic and stirred the sauce. Mine was thick, but I was happy with the flavor so I didn’t bother trying to adjust it.

If you've been waiting for a Fuller Acres quarter beef share, today is your lucky day! We're finally through our 2025 waitlist, and we have two shares available to reserve for February 🥩.
So, what does a 1/4 beef look like? On our farm, quarter beef customers literally receive a quarter of all the cuts we get back from the cow -- which includes ground beef, an assortment of premium steaks (porterhouse, ribeye, T-bone), roasts, sirloin steaks, short ribs, flank or skirt steak, brisket, stew meat and sandwich steaks. Quarter shares are priced by their hanging weight at the butcher, and all processing costs are included in the final balance. We pick up the meat and pack your share for pick-up at the farm or local delivery. If you have any questions, please reach out! We will have additional shares to reserve in 2026, first-come first-serve on our waitlist.
