Thanksgiving Coffee Co.

Thanksgiving Coffee Co. Artisan Roasted, Award-winning Specialty Coffee. Let Thanksgiving Coffee Company help unleash your creativity – the artisan in you.

Our motto is "Not Just A Cup, But A Just Cup!" We say this because we don't deal with agri-business - only small family farm coops, and the difference we make is impactful.

“A coffee farmer will love their trees when they provide food, shelter, education, and health care for their family. When a farmer loves their trees, they will care for them in a way that produces fine quality and flavor. Gre

at coffee derives from the welfare of the farmer and their family. It is true for all farmers who work the land, including our local farmers.”
– Paul Katzeff, Co-Founder

Before coffee becomes a harvest, it begins with a bloom. 🌼☕️
Bees, flowers, and thriving biodiversity all play a part in the ecosystems where coffee grows. When we care for the land and the pollinators that bring it to life, we help create healthier farms—and healthier coffee.
Because great coffee starts with a thriving ecosystem. 🐝🌿

Some coffees are defined by their flavor.
This one is defined by the people behind it.
Our Organic Guatemala Dark Roast comes from Guaya'b, a cooperative of smallholder farmers in the highlands of Huehuetenango, Guatemala. Guaya’b is a popti’-Maya word that refers to an ancestral practice of cooperation. Since 2005, we've worked together to build a relationship rooted in trust, sustainability, and a shared belief that coffee can be a force for good.
Through regenerative farming practices and long-term partnerships, Guaya'b farmers care for the land while producing exceptional organic coffee for communities around the world.
Every cup represents more than a harvest.
It reflects years of collaboration, stewardship, and respect for the people who grow it.

In 1992, we introduced one of the first certified organic single-origin coffee lines in the United States.
The Harvest Collection grew from a full-circle vision: healthy soil, thriving ecosystems, strong farmer communities, and exceptional coffee.
More than 30 years later, that vision continues. 🌱☕

The Story Continues.
Long before coffee reaches our roastery, countless hands and seasons have already shaped it.
Here, we honor that work one roast, one batch, and one bag at a time.

Some coffees become part of a catalog.

Others become part of a legacy.

When Thanksgiving Coffee introduced the Harvest Collection, it helped pioneer one of the nation's first organic single-origin coffee collections, inviting people to discover that every harvest has its own story.

First Harvest is the story of that beginning.

We're telling it through Organic Guatemala Dark Roast, one of the original coffees that helped shape the Harvest Collection, now sourced from the Guaya'b Cooperative, our trusted partners since 2005.

POV: Your morning starts at Thanksgiving Coffee. ☕

The familiar rhythm of grinding, brewing, steaming, and pouring. Small moments that come together to create something worth slowing down for.

That's what a morning ritual is all about.

One of my favorite Thanksgiving Coffee memories is Roastmaster Jacob Long recommending our Organic Ethiopia Natural Yirgacheffe after learning I brewed Turkish coffee at home.
Today it's still my morning ritual.
☕ Organic Ethiopia Natural Yirgacheffe
✨ Fresh cardamom
✨ Cinnamon
✨ Coconut oil
✨ Local honey
A centuries-old brewing tradition with a little Northern California inspiration.

How do you begin your morning?

Every great cup of coffee begins with a story.
A farmer's dedication. A community's resilience. A shared purpose that brings people together.
Since 1972, we've believed coffee is more than what's in the cup - it's the stories behind every harvest, every relationship, and every connection we make along the way.

Every bag of coffee carries a story.
A farmer.
A family.
A community.
A shared belief that business can create positive change.
For more than fifty years, storytelling has been part of who we are.

Coffee has never been just about what's in the cup.
It's about the conversations that it begins, the relationships that it grows, and the communities we build together.
The gift in reflection is the reminder that some of life's most meaningful moments start with simply taking the time to connect with others.
