A while ago we tried to reach out to Sheboygan, Wi. to find out what makes a Sheboygan sausage. A customer had asked us if we made them but couldn't tell us what was in them. I reached out to to see if they could help, but I never heard back. And all of my customer told me different things. So, in the end all I learned was that a Sheboygan sausage is whatever you want it to be.

So, if we're just making things up, allow me to introduce the Sheboygan pork chop! If you look at it in just the right light, it's kind of shaped like Wisconsin.

Visit Sheboygan you can use this. Tell your restaurants!

You gotta love a cold rainy week to make your appreciate a 3 day weekend!

We will be closed Monday, but we are open our normal hours through Sunday.

Now, all the specials... the food, not the band. I don't have that kind of pull yet.

45 day dry aged ribeye
Teriyaki marinated short ribs
Chimichurri marinated tenderloin skewers
Marinated skirt steak (also chimichurri)
And just for this weekend we bring you
Chicken Salad (with BBQ spices)

Ham Salad (ham, bacon, Swiss, eggs, and all the love a Midwestern guy has for his roots)

You, however, should smile. Our tech issues with EBT are over and we can once again accept payments from SNAP/EBT cards. Sorry for those 2 days. couldn't be helped. I'm just happy we got it resolved before Memorial Day Weekend.

Speaking of which. We have a few things in the case today including .... more GROUND BISON! Also, pulled pork, bacon jalapeno dip, a little chili, and we'll have some more fun stuff out tomorrow.

One of my favorite things about the shop is when I come in on a cold morning and get to scoop out a cup of warm broth from the stock pot.

One of my least favorite things is that I cannot accept EBT /SNAP payments for about a week while we update some software on our register. Really, it sucks. I want everyone to have access to high quality meat. And I promise we'll be able to take payments soon-ish.

I appologize for the inconvenience this causes, especially with the holiday weekend coming up, but it had to be done sometime.

Do you remember when Gateway sold their computers in cow print boxes?

You overpaid for mediocre desktop and some spots on cardboard. Good times!

You can overcharge for a lot of things by slapping a cow print on it. Adidas sells Sambas. Honestly, I don't hate it. There's an "artist" on Esty selling a 12 x 16 PRINT of a cow pattern for $20. Not even a canvas. But my favorite is definitely the G***k. Because if I'm gonna hold my gun sideways while popping a cap in something, I want to see those beautiful black and white spots while I'm doing it. The pink trigger is just icing on cake.... casings on the bullet? Dude! How sick would it be to have cow print bullets shot out of pink casings! Or vice versa.

Imagine taking a bite out of an elk steak and finding a cow print bullet! That's right, I hunt elk with a G***k in this scenario. Just roll with it.

I guess my point is... it's Monday, and I don't have any good ideas to post about today. Memorial Day is next Monday and we are closed! But we will be open Saturday and Sunday 10 - 4. Here's my plan:
45 Day dry aged Ribeye
Pulled Pork
Shredded BBQ Chicken
50/50 burgers
Hot Dogs
Cheddar Hot Dogs
Marinated Tenderloin Skewers
Chimichurri marinated Skirt
Teriyaki marinated Short Ribs
and I'll have a few last minute fun things if I have time to make them.
and, of course, we'll have all the ground beef and sausages you can shoot a cow print G***k at.

What if when you shot it the recoil made it "Moo" like one of those toys you flip upside down and back to make sounds.

Warm smoked chickens bring soup pickins.

There are few things in life as comforting as a roast chicken. Whether it's one you roast yourself or one of 9-Times' whiskey/citrus brined smoked birds.

The only thing more comforting is two roast chickens.




p.s. the carcass also makes great stock for rainy weekdays.

But, if you little guppy is graduating today. Congrats! If you forgot to make a reservation somewhere you can always grab something to grill.

A good burger cooked on a George Forman in a dilapidated dorm room is still a good burger. Toss a small piece of used pizza box cardboard on there too for a little smoky essence.

Please don't do any of that.... except buy some meat from me.

Or a free book without a purchase. Honestly, if you drive by slow enough with your windows open... you're gonna get a book.
