Kick off summer with bright, bold and citrusy Persian Lime Infused Olive Oil 🍋‍🟩

Like sunshine in a bottle, this oil delivers a tangy, aromatic burst of flavor to every dish.

Drizzle over grilled fish or chicken for a dash of zesty flavor or pair with Coconut Balsamic for a tropical shrimp marinade (best tacos ever!). We’ve even added it into cookies for a bright twist.

Persian Lime Cardamon Cookies:

I N G R E D I E N T S :
3 cups unbleached flour (or cup for cup gluten-free flour)
2 cups granulated sugar
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons green cardamom seeds
1 cup Rocky Mountain Olive Oil Persian Lime infused Olive Oil
2 large eggs, whisked

D I R E C T I O N S :
Preheat the oven to 350 F.

In the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl, add the sugar, Lime infused Olive Oil, and eggs. Beat on medium speed until thick and creamy, about 3 minutes.

In a separate bowl whisk together the flour and remaining dry ingredients. Add the dry ingredients to the wet ingredients in three additions beating in between additions until no dry flour remains.

Scoop approximately two teaspoons of dough per cookie, and place the rounded mounds at about 1 1/2" intervals onto a well greased or parchment lined cookie sheet pan. Bake in the center of the oven for 10 minutes.

Increase the heat to 425 F and bake for an additional 2 minutes to aid in creating a crackly golden brown exterior. Remove the cookies to a rack to cool. Repeat with the remainder of the dough.

A lot of people are curious about cooking with lavender… but also slightly terrified of making food taste like soap. Fair. The secret is balance.

Lavender works beautifully when paired with bright ingredients like lemon, honey, olive oil, and balsamic vinegar because the acidity and sweetness soften the floral notes and make everything taste fresh instead of overpowering.

That’s why we’ve become completely obsessed with lavender + lemon lately. From sparkling lavender lemonade and whipped ricotta crostini to roasted chicken, vinaigrettes, cocktails, and summer entertaining boards, this pairing somehow manages to feel both elevated and approachable at the same time.

Who says chocolate is just for dessert?

Our Dark Chocolate Balsamic is made with three distinct cacao beans, making it a rich, velvety indulgence that works for both savory and sweet applications.

Drizzle over gelato or strawberries or swirl it into your next espresso martini for a chocolatey twist. It’s also a must try for steak!

Chocolate Espresso Grilled Steak:

I N G R E D I E N T S :

2 lbs skirt steak

3 Tablespoons Rocky Mountain Olive Oil Garlic Infused Olive Oil

2 Tablespoons Rocky Mountain Olive Oil Dark Chocolate Balsamic Vinegar

3 Tablespoons brown sugar

2 Tablespoons cocoa powder

1 Tablespoon instant espresso

2 teaspoons Grind Spice Co. Rocky Mountain House Blend Salt

I N S T R U C T I O N S :

1. In large a bowl, add the olive oil, balsamic, brown sugar, cocoa powder, instant espresso and Rocky Mountain House Blend Salt.

2. Whisk together these ingredients until well combined.

3. Add the stake to the bowl, cover and refrigerate for 6-8 hours.

4. Preheat your grill to medium high and grill the steak for 3-5 minutes per side (thicker steaks may need longer).

5. Remove the steak from the heat and allow to rest for 5-10 minutes.

6. Slice the steak against the grain before enjoying.

🧄Garlic Infused Olive Oil 🧄

Bursting with the bold flavor of fresh and pungent garlic, this oil is a kitchen staple that elevates any savory dish. Marinades, dressings, finishing – this oil does it all!

Garlic Beet Fries:

I N G R E D I E N T S :
🫜 4 large red or golden beets peeled
🧄2 Tablespoons Rocky Mountain Olive Oil Garlic Infused Olive Oil
🧂 ½ teaspoon Grind Spice Co. House Blend Salt

I N S T R U C T I O N S :
Preheat your oven to 425 degrees F.

Wash and peel your beets, then cut into 1/4-inch-thick strips.

Put the sliced beets to a rimmed baking sheet and toss with the olive oil and our House Blend Salt.

Roast the beets until tender and lightly browned, 20-25 minutes total, flipping halfway through.

Serve your fries with your favorite dipping sauce! We love ours with Avocado Chimichurri.
