A huge thank you to everyone who stopped by our table, sampled some of our products, picked up a bottle or two, or simply hung around to chat for a bit. The Craft Fair was just one part of a packed Acadian Festival that brought folks to the Valley from as far away as Texas, Ontario, France, and plenty of places in between and Madawaska certainly pulled out all the stops!
Thinking back on some of our conversations yesterday, one question came up quite a bit:
“How do you know what flavor to infuse and bottle?”
Well... that’s the neat part. We don’t. 😂
Taste is incredibly subjective. What one person absolutely loves might not be another person's first choice.
We start by making small R&D batches at home to see whether we can capture the flavor we're looking for. But we really don't know whether we've created something you'll love, or if we just accidentally created our new favorite flavor.
Our newest Cocoa Infused Maple Syrup is a perfect example. We make it by steeping cacao nibs in piping-hot maple syrup for hours, allowing the cacao to impart a genuine chocolate character directly into the maple.
And bringing something like that to market is a bit of a gamble. After all, there are plenty of cheaper and more traditional ways to add chocolate flavor to something. Developing, producing, bottling, labeling, and stocking an entirely new specialty maple syrup takes time and resources without any guarantee that customers will embrace it.
But this one?
Based on the reactions during taste testing and the bottles disappearing from our table, Cocoa Infused is quickly emerging as a fan favorite.
That also leads into another question we hear all the time:
“What do you actually use flavored maple syrup for?”
The answer is definitely more than pancakes and ployes!
Baking with them, incorporating them into desserts, mixing them into drinks, building glazes, or simply substituting them into recipes you already make can add another layer of flavor that nudges something from pretty good to spectacular.
