🎂 Stacking a 3-Tier Cake — Tips Below!

A few behind-the-scenes tips from this 3-tier cake build:

• When filling and frosting the 7” and 5” tiers, I build them directly on cake boards.

• For the bottom tier, insert boba straws to support the tier above, then chill the cake until firm.

• Repeat the same process for the middle tier, placing the straws based on the diameter of the top tier before chilling.

• I use heavy-duty cardboard cake drums. This cake had a total of 16 layers plus fillings, so it was quite heavy—I doubled up the cake drums for extra support.

• Once all three tiers are stacked, I insert a center dowel all the way from the top tier down through the cake drum to secure the entire cake.

• Pro tip: sharpen the end of your center dowel with a pencil sharpener. It helps it pass through the cake boards and drum much more easily.

• One of the most important steps is trimming each cake layer level. Straight, even tiers make stacking much safer and cleaner.

Crumb coat deep dive! Watch till the end 🤍

• Secure the first cake layer onto the cake board with buttercream
• Brush syrup onto the sponge
• Add buttercream on top and around the sides
• Fill with your favorite filling

Second layer ✌️
I like adding buttercream around the sides while stacking because it helps keep the cake more stable.

Repeat for the next layer 🤍

Third layer tip 👍
Slightly carving out the center creates a little pocket for the filling and helps everything stay in place better.

Finish with the final layer and a smooth overall crumb coat

A thorough crumb coat helps create a more stable base for icing 🤍
