Tonight, I made homemade venison burgers and potato salad.

Two pounds ground venison (can substitute to any ground meat)
2 eggs
And a few dashes of garlic pepper, salt, regular pepper and Kinders butter burger seasoning.
Roll a big meatball into the burger press and boom done!
This can be made with any seasoning of choice.

Had 4 potatoes that needed to be used up, so I figured potato salad would be a perfect side for burgers. I boiled 4 potatoes. In a bowl I added Mayo, southern coleslaw dressing, dill, a splash of pickle juice, and about a table spoon of ranch seasoning. I cut the potatoes up and added them to the dressing mixture to soak up all the dressing. Roses in chopped green onion and bacon. Served cold, but next time, will serve it warm. It was delicious!

Hi everyone! Tonight was an easy peasy dinner kind of night. I had some homemade Sunday gravy aka sauce in the freezer that I took out this morning. I fried up some chopped pancetta (yay publix has this), and onions until golden, normally I’d deglaze with vodka but I didn’t have any so I just added about a 1/2 cup of heavy cream and 2 handfuls of shaved parm. Boiled up some rigatoni, cooked those till right before aldente and finished the rest of the cooking in the sauce. I had some leftover chicken cutlets I cut up and tossed in for some added goodness. I didn’t really have to season, because my frozen sauce was seasoned and cooked for hours. I added a little S&P after I added the cream, but not much is needed, from the salty pancetta. Enjoy!

Tonight is a two night dinner kind of night…..one kid has her first MS chorus concert, and has been at school since 8am and won’t be home till 7:30! I get dinner all set and she texts me “It’s embarrassing if I have home cooked food, can you just bring a whole pizza for my friends and I”…..sorry kid I’m out on that 😂 I made steak and veggie kabobs, with a Greek yogurt/feta dipping sauce and some pineapple kabobs that have cinnamon and sugar on it. Served with rice pilaf

Following the concert, it’s a mad dash to get both girls to the lacrosse field. I packed up some of first dinner in Tupperware to get some food into them and get some energy. Nothing too heavy but enough to keep those glucose levels in check!

Dinner #2 is a super simple ground turkey, veggie teriyaki stir fry. Nothing too heavy but loaded with veggies and protein! Start to finish, this was done in 10 minutes! I also used two bags of veggies (can be served with rice, cauliflower rice, or lomein noodles)

Hi everyone! Sorry I haven’t posted in a while. We have been super busy with sports, and had Ellie here for the week. Plus, I haven’t really made anything worth writing about 😂. It’s been salads with grilled chicken, hot dogs, and burgers. Whatever is quick and easy.

Tonight’s dinner is what my mom and Nan would have called a “Giambotta” aka everything but the kitchen sink lol had a ton of veggies I needed to use up and 1 pack of sausage I needed to use up. Most nights, this meal wouldn’t fly with the hubs since he’s super picky but he’s traveling for work! In a large pan, I cut up zucchini, yellow squash, asparagus, and garlic, added salt, pepper, Italian seasoning, and olive oil. Baked at 375 for 45 minutes. I tossed this over pasta and added grated cheese. Kids were meh about it, but ate the sausage and pasta. This can be made with any veggies, and can swap the sausage for cut up chicken, or chicken sausage. Enjoy!

Good morning, happy Easter Eve! Today is meal prep day. I was supposed to do this during the week, but I opted for adventures with my girls and didn’t feel like being in the kitchen all day.

With Easter tomorrow, I’m making lasagna for dinner, as well as a small Ham (only Eddie and I eat ham) with all the fixings. Making the lasagna the day (or a few days before) is key. Not only will it save time when you’re hosting, but lasagna ALWAYS taste better after it’s had time to settle. Here is photos of each step. Tonight’s dinner is another family favorite and adopted recipe from the firehouse! 2 packages of tri color pasta, 1 zucchini and 1 yellow squash (I cheated and bought the pre sliced), 1 package of California blend frozen veggies (steam bag if possible), 1-2 packages of chicken sliced thin (a tad of bbq sauce on the chicken for some flavor. Totally optional), 1 package of Colby Jack and pepper Jack cheese cubed up, and Ken’s Italian dressing. It MUST be Ken’s!!!

In a pot of boiling salted water, add pasta. Mid way through, throw in the zucchini and squash. Once it’s done, drain and add back to the pot. Add the California blend to that as well (if package says heat for 6, do it for 5 minutes).

Grill up the chicken and cook all the way through.

Cube up the cheese, and chicken and toss into the pot with pasta and veggies. Once it’s mixed through, add the whole bottle of dressing and mix again.

This can be served hot, or cold.

Sorry I haven’t posted in a few day. We were away camping in the mountains. To me, one of the best parts about camping is cooking in the outdoors. Nothing smells better than camp breakfast and fresh brewed coffee! Started us off with bacon, sausage, eggs, and hash browns. I made a breakfast wrap with all of the above for Eddie and Gracie, and Lex and I had ours on biscuits that I pre made at home. Did some grilling, made some bacon cheese fries in the air fryer, and made a delicious batch of chicken and dumplings in the crockpot…. Recipe attached

Everyone! Sorry I haven’t posted in a few days. Last few nights have been easy peasy dinners. Tuesday, I made stock from the roasted chicken from the night before. It was a chilly and stormy night so we ended up having a hot bowl of chicken soup and I also made chicken sausage sandwiches on ciabatta rolls. Peppers and onions for Eddie, and spinach and fresh mozzarella for me and the girls just the sausage and butter on the rolls.

Last night, I made roast beef and sliced it thin on the deli slicer and served with brown gravy and mashed potatoes.

Clean out the fridge for tonight’s dinner, because we are headed out for the mountains tomorrow! Stay tuned for camp meals!

Busy weekend filled with sports. Took a day off of cooking Saturday for a triple header lacrosse game, and a softball tournament to watch a former teammate of the girls play in. Made the venison backstrap yesterday, two separate ways. Roasted one half in a new traeger rub, and breaded and fried the other half. Made a fresh tomato sauce for the lobster ravioli.

Tonight, we have an early softball game, but will come home to roasted chicken, green beans, and sweet potatoes. Made a huge oven roaster that will be for dinner tonight, chicken salad for the rest of the week and some to go in homemade chicken soup that I’ll freeze. I’ll boil the carcass tomorrow to make the chicken stock. Have a great night, Let’s go FM Flames 🔥!

Beautiful night to grill here in South Carolina! Too bad we can’t enjoy it with an iced cold adult beverage since the hubs and I are on two separate fields! Made some hot dogs, hamburgers, grilled shrimp, and some grilled veggies. Since it’s a Lenten Friday, I made a grilled shrimp wrap for me. Threw in some of the grilled shrimp, chopped up some of the grilled veggies, added some slaw mix, and some homemade mango salsa. Oh. My. Lawd….so good, even enjoyed eating it in the car lol

Seasoned the shrimp with just salt, pepper, and garlic seasoning.

Mango salsa-1 mango, 1 tomato, 1/2 a red onion, 1 lime, cilantro, and tajin to liking (I like a lot!).

Keeping it real tonight, y’all. No fancy meal. No thought out planning. Wasn’t in the mood to cook, but not in the mood to go out.

Cubbed up chicken breast, 2 boxes of rice-a-roni, and a bagged chopped salad. Everyone ate, hubs loves this meal…full on 90’s style meal (if you know, you know). No stress, easy clean up, fully bellies. Win win for everyone! Have a great time everyone! Enjoy your beautiful families.

Raise your hand if you regret not buying a farm when you moved to South Carolina so you could eat off the land, because your children are eating you out of house and home 🙋🏻‍♀️. Just me? My kids plow through fruits and veggies. I’m not complaining about that, trust me! I’m very lucky with how well my girls eat. However, it’s a small fortune. This is just a mid week haul from Aldi. Not to mention the regular snack that are already put away in the snack bin. What’s everyone’s go to snacks for rapidly growing children?

*I did pick up a little treat for an at home dinner date night for this weekend. Lobster ravioli that I’ll serve with a white wine, tomato reduction, and venison backstrap (the deer equivalent to a filet, also not purchased. Forest to table by the hubs)
