A high-protein weeknight go-to that’s loaded with color and flavor!

📝 Ingredients:

1/2 lb ground turkey

1/2 tbsp olive oil

1/2 yellow onion, diced

1/2 cup mushrooms, diced

2 tbsp low-sodium soy sauce

1/2 tsp garlic powder

Salt & pepper to taste

Stir-Fried Veggies:

1/2 cup broccoli florets

1/4 cup red bell pepper, chopped

1/4 cup yellow squash, sliced

1/4 cup zucchini, sliced

1/4 cup mushrooms, sliced

1 tbsp olive oil

Salt, pepper, garlic powder to taste

Base:

1 cup cooked white jasmine rice

🍽️ How to Make It:

1️⃣ Cook the Rice:

Start by cooking jasmine rice according to package instructions—a fluffy, neutral base that balances bold stir-fry flavors.

2️⃣ Brown the Ground Turkey:

In a skillet over medium heat, sauté diced onion and mushrooms in olive oil for 2–3 minutes. Add ground turkey, garlic powder, soy sauce, salt, and pepper. Cook until browned and crumbly for a savory, umami-packed protein base.

3️⃣ Sear the Veggies:

In a separate pan, heat olive oil. Add broccoli, bell pepper, squash, zucchini, and mushrooms. Season lightly and stir-fry until just tender and slightly charred—a quick veggie fix with tons of color and crunch.
