The most important scoop is the one you don't see.

Before products leave our facility, we regularly pull containers from the line and cut them straight down the middle. The cross-section tells us everything we need to know about texture, consistency, and how evenly flavors are distributed throughout the product.

It's a simple test, but it plays a big role in making sure every container meets the standard. Pretty satisfying to look at, too.

On this day, 30 years ago, everything changed. G.S. Gelato received its manufacturing license.

It may sound like a piece of paper to you, but behind it were 18 months of challenges, setbacks, and determination. Guido and Simona came to America from Italy with a vision to introduce authentic Italian gelato, only to discover that the equipment they brought had never been approved for wholesale production in the United States.

Most people would have turned around. They didn't.

That license became the foundation for everything that followed. Today, what started as a dream has grown into a company producing gelato, sorbet, non-dairy desserts, and private label frozen treats enjoyed across the country, nationwide.

We're proud to celebrate this milestone and grateful to everyone who has been part of the journey over the past 30 years. We celebrate June 12th every year because it's not just a license date. It's proof that when you believe, all things are possible.
