Master’s Hand BBQ Bison Chili
Ingredients:
1 lb Eel River ground bison
1 large onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 cup carrots, diced
1 can (15 oz) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 cup beef or vegetable broth
2 tbsp Master’s Hand BBQ All Purpose Seasoning
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp salt (or to taste)
1/2 tsp black pepper (or to taste)
2 tbsp vegetable oil
Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños
Instructions:
Heat the Oil: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
Cook the Bison: Add the ground bison to the pot. Cook, stirring occasionally, until the bison is browned and cooked through. Remove the bison from the pot and set aside.
Sauté Vegetables: In the same pot, add the diced onion, garlic, red bell pepper, green bell pepper, and carrots. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
Add Seasonings: Stir in the Master’s Hand BBQ All Purpose Seasoning, chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook for another 1-2 minutes, allowing the spices to become fragrant.
Combine Ingredients: Return the cooked bison to the pot. Add the diced tomatoes, kidney beans, black beans, and beef or vegetable broth. Stir to combine all ingredients.
Simmer: Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for 30-45 minutes, stirring occasionally, until the flavors are well blended and the chili has thickened to your liking.
Adjust Seasoning: Taste and adjust the seasoning if needed. If you prefer a spicier chili, you can add a pinch of cayenne pepper or some hot sauce.
Serve: Ladle the chili into bowls and garnish with your choice of toppings such as shredded cheese, sour cream, chopped cilantro, or sliced jalapeños.
