How to make white queso dip that won’t break: medium-low heat and white American from the deli. No roux needed.

1½ lbs white American cheese (deli counter)
8 oz pepper jack, cubed
2 cups milk

Warm the milk on medium-low. Add the cheese a handful at a time and keep stirring. High heat is what makes it seize and go grainy. Too thick? Splash in more milk.

Talk about a roller coaster ride start to the season, but we still love game day every week, at home or taking the kids to the Big House in Ann Arbor, and Traeger sheet pan nachos come with us.

325 for 20 minutes, built in the back of the truck at the tailgate. One layer of chips, ground beef with my Salt-Free Taco, onion, green pepper, corn, green chilies, and cheese. Dust with Traeger Rub, just until the cheese melts.
