Classic Banana Bread

INGREDIENTS
2 cups (250 grams) all-purpose flour, spooned & leveled
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup (115 grams) unsalted butter softened
1/2 cup (100 grams) granulated sugar
1/4 cup (50 grams) light brown sugar packed
2 large eggs at room temperature
2 teaspoons pure vanilla extract
2 cups (440 grams) mashed banana
1/2 cup (80 grams) chopped walnuts (optional)
INSTRUCTIONS
Preheat the oven to 350°F (177°C). Spray a 9x5 loaf pan with nonstick cooking spray, line the pan with parchment paper, and set aside.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using an electric mixer, mix together the butter, granulated sugar, and brown sugar for 4-5 minutes or until light and fluffy.
Mix in the eggs and vanilla, making sure to mix well after each addition. Stop and scrape down the sides of the bowl, then add the mashed banana and mix until fully combined.
Add the dry ingredients to the wet ingredients and mix until just combined, making sure not to overmix the batter. Gently stir in the chopped walnuts.
Scoop the batter into the prepared loaf pan and spread it around into one even layer.
Bake at 350°F (177°C) for 55-65 minutes or until a toothpick inserted into the center comes out clean. Tent with aluminum foil to prevent excess browning if needed.
Remove from the oven and allow to cool in the loaf pan for 20 minutes. Carefully remove the bread from the loaf pan and transfer to a wire rack to cool completely.
NOTES
Store in an airtight container at room temperature for 3-4 days or in the refrigerator for up to 5 days.
To freeze the the loaf: Wrap tightly with plastic wrap and store in a freezer bag or container in the freezer for up to 3 months. To thaw, place it on the counter for several hours or overnight so that it can come to room temperature.
To freeze individual slices: Place the slices of bread on a baking sheet lined with parchment paper, then place the baking sheet in the freezer for a couple of hours or until the slices are frozen. Place the frozen slices in a freezer bag or container and store them in the freezer for up to 3 months. Thaw individual slices to room temperature or reheat frozen slices in the microwave for 20-30 seconds or until warmed through.
Butter: If you only have salted butter on hand, reduce the salt in the recipe to 1/4 teaspoon.
Eggs: Room temperature eggs are best as they will disperse more evenly into the batter. To bring your eggs to room temperature quickly, place them in a bowl of warm water for 5-10 minutes.
Bananas: The riper the bananas, the better! You’ll need about 4 large bananas or 5 medium bananas to get 2 cups of mashed banana.

Gluten-Free Banana Bread

Ingredients
3 to 4 medium overripe bananas, mashed (1 1/2 cups)
1/3 cup unsalted butter, melted
3/4 cup granulated sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups gluten-free all purpose flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt

Method
Preheat oven to 350°F.
Prepare the loaf pan:
Grease an 8x4-inch loaf pan generously with cooking spray.

Mix the wet ingredients:
In a large mixing bowl, add mashed bananas and stir in melted butter, sugar, egg, and vanilla.

Mix the dry ingredients and combine:
In a smaller bowl, add flour, baking soda, baking powder, and salt. Whisk to combine. Add the flour mixture to the larger bowl with the wet ingredients and stir until fully combined. (Note that it will be slightly lumpy because of the pieces of mashed banana.)

Bake:
Pour batter into the prepared loaf pan, scraping the bowl to assist. Bake for 50 minutes to 1 hour, or until a tester comes out clean.

Serve:
Cool on a rack at least 15 minutes before removing the loaf from the pan. Cool completely before slicing and serving.

Mummy’s Banana Bread

Ingredients
100g (4 oz) Unsalted Butter, at room temperature
140g (5 oz) Light Muscavado Sugar
2 Large Eggs
3–4 Large Ripe Bananas
150ml (3/4 pint) Buttermilk
280g (10 oz) Plain (All Purpose) Flour
1 tsp Bicarbonate Soda (Baking Soda)
Instructions
Pre-heat the oven 180 degrees (355 fahrenheit). Butter a 2 lb / 20 x 30cm loaf tin (the larger of the two standard sizes) and line with vertical and horizontal strips of baking parchment.
Using a wooden spoon or an electric whisk beat together the butter and sugar until light and fluffy. Beat in the eggs one at a time.
Fold the buttermilk and 3 of the bananas, lightly mashed with a fork, into the mixture followed by the bicarbonate of soda and the plain flour. Be sure to mix the bicarbonate in well, as if lumps remain in the cake they taste really, really awful!
Using a rubber spatula scrape the mixture into the tin and smooth out the top. If you’re using the fourth ripe banana peel it and slice it down the middle, laying the two halves cut size up on top of the cake to caramelise.
Bake the banana bread in the oven for 1 hour and 15 minutes. Check it after 40 minutes to make sure it is not burning at the corners, this will depend on your oven – in my flat in London it catches around the 1 hour mark, but in my mothers oven it never burns! If it does catch a little, just cover the top with a bit of tin foil to shield the edges.
Leave in the tin to cool for 10-15 minutes before turning out onto a cooling rack and slicing once cool.

Classic Banana Bread

Ingredients
½ cup + 1 tbsp butter, softened at room temperature
1 cup granulated sugar
2 large eggs, room temperature
1 cup mashed ripe bananas
1 tsp pure vanilla
2¼ cups all-purpose flour
¾ tsp baking powder
¾ tsp baking soda
½ tsp salt
¼ cup sour milk

Instructions
Preheat oven to 350°F. Grease 9”x5”x3” loaf pan.
Sour milk by placing ¾ tsp vinegar in measuring cup and topping it with milk to equal ¼ cup. Let stand 5 minutes before using in recipe.
Sift, or sieve, the flour, baking powder, baking soda, and salt together into bowl and set aside.
In bowl of stand mixer fitted with paddle attachment cream the butter at medium speed. Reduce speed slightly and gradually add the granulated sugar. Beat until mixture is pale-colored and has an airy/fluffy texture. Stop mixer, as necessary, to scrape sides of bowl with rubber spatula to ensure the ingredients are evenly incorporated.

Add the eggs, one at a time, beating well after each addition and using a spatula, as necessary, to scrape sides of bowl.
Beat in the mashed bananas and vanilla.

Oatmeal Banana Bread

INGREDIENTS
2 cups all-purpose flour
1 cup lightly packed brown sugar
1 cup rolled oats
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
3/4 cup almond milk
1/2 cup vegetable oil
1 teaspoon vanilla extract
4 very ripe bananas, mashed (about 1 1/4 cups)

INSTRUCTIONS
Preheat oven to 350˚F (180˚C). Grease a loaf pan or line the bottom with parchment paper.
In a medium bowl, whisked together flour, sugar, oats, baking soda, baking powder, salt, cinnamon, nutmeg.
Stir in the almond milk, vegetable oil, vanilla extract and mashed bananas and mix until combined.

How to make
STEP 1

Heat oven to 350°F. Grease and flour 8x4-inch loaf pan; set aside.

Moist Banana Nut Bread

Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup unsalted butter (8 tablespoons) – softened
1/3 cup granulated sugar
1/4 cup brown sugar
1/2 teaspoon fine salt
2 large eggs – room temperature
3 very ripe bananas (medium/large) - mashed
1 teaspoon vanilla extract
1 cup pecans – coarsely chopped + extra for topping

Instructions
Preheat the oven to a 350°F. Grease a 9x5-inch loaf pan or line with parchment paper, leaving an overhang on the sides to lift the baked bread out.

Mash 3 very ripe bananas with a fork or potato masher until chunky applesauce consistency.

In a medium bowl, combine and whisk 1 1/2 cups all-purpose flour and 1 tsp baking soda. Set aside.

In a large mixing bowl, cream together 8 tbsp softened unsalted butter, 1/3 cup granulated sugar, 1/4 cup brown sugar and 1/2 tsp fine salt until smooth (about 2 mins on high speed).

Add mashed bananas, 2 large eggs and 1 tsp vanilla extract to the batter. Beat on low just until combined, about 30 seconds.

Combine dry and wet ingredients and beat on low or stir in with a spatula just until combined.

Gently fold in coarsely chopped pecans.

Spread the batter evenly into the prepared loaf pan. Sprinkle more coarsely chopped pecans over the top of the bread and bake at 350°F for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean. (My oven takes 55 minutes). Let banana bread rest 5 minutes before transferring to a wire rack to cool.

nondairy milk (1/4 cup)
vanilla extract (1 tsp.)
lemon juice or apple cider vinegar (1 tsp.)
unbleached white flour (1 cup)
whole wheat or spelt flour (1 cup)
baking soda (1 tsp.)
baking powder (1/2 tsp.)
sea salt (1/2 tsp.)
cinnamon (1 tsp.)
nutmeg (1/8 tsp)

Directions
Preheat the oven to 350°F.

In a large bowl, mix together the mashed bananas, sugar, nondairy milk, vanilla, and lemon juice.

In a separate bowl, combine the flours, baking soda, baking powder, sea salt, cinnamon, and nutmeg.

Add the wet ingredients to the dry and mix together, but don't overmix.

Transfer to a 9 x 5 x 3-inch loaf pan that has been lightly sprayed with nonstick spray.

Bake for 1 hour (depending on your oven, it could take 10 minutes extra to feel springy on the top).

Ingredients:
3 ripe bananas, gently rubbed under cold running water

1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda

Directions:

Wash hands with soap and water.
Preheat oven to 325 degrees F. Spray a 9x5-inch loaf pan with non-stick cooking spray. Set aside.
In a medium mixing bowl, mash the bananas. Crack egg separately into a small bowl then pour into bowl with bananas. Wash hands with warm water and soap after cracking raw egg.
Beat in the sugar and vanilla until mixed well.
In a large mixing bowl, combine flour, baking powder, baking soda, and salt.
Add the liquid ingredients to the flour mixture stirring just until the dry ingredients are moistened. Pour batter into prepared pan.
Bake for 50 to 60 minutes or until a knife inserted near the center comes out clean.
