Ingredients

3 lbs chicken drumsticks and thighs

1 green bell pepper, chopped

1 red bell pepper, chopped

1 large onion, chopped

4 cloves garlic, minced

2 green onions, sliced

2 tbsp olive oil

Jerk Marinade

2 tbsp jerk seasoning

1 tbsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp dried thyme

½ tsp cayenne pepper (optional)

2 tbsp brown sugar

2 tbsp soy sauce

1 tbsp Worcestershire sauce

1 tbsp apple cider vinegar

Juice of 1 lime

Instructions

1. Preheat the oven to 400°F (200°C).

2. In a large bowl, combine the jerk seasoning, paprika, garlic powder, onion powder, thyme, cayenne pepper, brown sugar, soy sauce, Worcestershire sauce, vinegar, lime juice, and olive oil.

3. Add the chicken and toss until thoroughly coated. Marinate for at least 30 minutes, or overnight for deeper flavor.

8. For extra caramelization, broil for 2–3 minutes at the end.

9. Spoon the flavorful pan sauce and vegetables over the chicken before serving. Serve hot with rice, mashed potatoes, or roasted vegetables.

Crispy Cheesy Shrimp Rolls

Golden and crunchy on the outside, creamy and cheesy in the middle, with tender shrimp tucked into every roll. Serve them warm with the cool garlic dipping sauce for an easy appetizer that disappears quickly.

Ingredients

Cheesy Shrimp Rolls
1 lb medium raw shrimp, peeled, deveined, and tails removed
8 egg roll wrappers
4 oz cream cheese, softened
1 cup shredded low-moisture mozzarella cheese
2 garlic cloves, finely minced
1 tsp paprika
½ tsp salt
¼ tsp black pepper
2 tbsp finely chopped fresh chives, divided
Water, for sealing the wrappers
Neutral vegetable oil, for frying

Creamy Garlic Dip
½ cup sour cream
¼ cup mayonnaise
1 small garlic clove, finely grated
1 tsp fresh lemon juice
⅛ tsp salt

Directions
1️⃣ Prepare the Shrimp

Pat the raw shrimp very dry with paper towels.

Season them with paprika, salt, and black pepper.

Do not cook the shrimp before assembling the rolls.

2️⃣ Make the Cheesy Filling

In a bowl, mix the softened cream cheese, mozzarella, minced garlic, and 1 tablespoon chopped chives.

Stir until evenly combined.

3️⃣ Fill the Wrappers

Place one egg roll wrapper on a clean surface with one corner pointing toward you.

Spread about 2 tablespoons of cheese filling across the lower center.

Arrange several shrimp in a line over the filling.

4️⃣ Roll Tightly

Fold the bottom corner over the filling.

Fold both sides inward, then roll tightly toward the top corner.

Brush the final corner with water and press gently to seal.

Repeat with the remaining wrappers.

5️⃣ Make the Garlic Dip

Mix the sour cream, mayonnaise, grated garlic, lemon juice, and salt in a small bowl.

Cover and refrigerate until serving.

6️⃣ Fry Until Golden

Pour about 1 inch of oil into a deep skillet and heat it to 350°F.

Fry the rolls in small batches for 3 to 4 minutes total, turning occasionally, until crisp and deeply golden.

The shrimp inside should be opaque, plump, and gently curved into a C-shape.

7️⃣ Drain and Garnish

Transfer the cooked rolls to a paper towel-lined plate or wire rack.

Sprinkle with the remaining chopped chives.

Serve immediately with the creamy garlic dip.
