So what exactly is a kolache?

If you’ve spent any time in Texas, you’ve probably seen them. If you haven’t, here’s the short version:

A kolache is soft, slightly sweet dough wrapped around a smoky sausage and melted cheese, then baked until golden brown.

And no, it doesn’t really eat like a hot dog.

The dough is softer and richer, the sausage is smokier and more savory, and the whole thing feels more like a warm, satisfying bakery item than something you’d grab at a cookout.

If you’re a hot dog fan, you’ll probably get the appeal immediately. If you’re not, don’t let the comparison fool you.
