Wish us luck. We had a small dry spot and planted Edible Pod Pea's, Spinach and Lettuce. Potatoes are cut and curing to be planted when it drys up more.

Zucchini pie (tastes like sugar cream pie)

1 cup boiled zucchini without skin
Let cool
1 cup sugar
1 Egg
1 Tablespoon flour
1 can sweetened condensed milk
1 1/2 Tablespoon butter

Mix all in blender
Pour into pre made pie shell
Sprinkle with nutmeg and cinnamon
Put on a sheet pan in case it boils over
Bake 425 for 10 minutes
Then bake at 350 for 20 -50 minutes until knife comes out clean

We have Cushaw squash for the market this weekend!

Cushaw Squash Pie Recipe

• 2 cups cooked and drained Cushaw squash
• 2/3 cup brown sugar or sugar
• Sprinkle of salt
• 2 tsp pumpkin pie spice
• 2/3 cup Milnot evaporated milk
• 2 eggs

• Mix or blend well
• Pour mix into pie shell

• Bake at 400-degrees for 15-minutes, then 350-degrees for approximately 40-minutes or longer
• It is done when the knife comes out clean
