Agave potatorum, better known as Tobalá, is one of mezcal’s most coveted varietals. It’s traditionally wild-harvested and painstakingly slow to mature, often taking over a decade before it’s ready for the still.

8 - Del Maguey Tobalá Mezcal: Santa Maria Albarradas, Oaxaca, made by Rogelio Martinez Cruz and Leopoldino Miranda. Wild agave from high altitude canyons, roasted 30 days. The first wild varietal mezcal sold in the US, 1997. 90 proof.

⠀

⠀
3 - Gracias a Dios Mezcal Tobalá: Valles Centrales, Oaxaca. Agave harvested around 13 years, conical earthen oven, 8 to 10 day pine vat fermentation, bottled unaged. 90 proof.

⠀
1 - El Jolgorio Tobalá Mezcal: Matatlán, Oaxaca, mezcalero Gregorio Martinez Jarquin. Semi-wild tobalá harvested at 12 years, pit roasted, crushed by mule-drawn tahona, double distilled. 94 proof.

Do you know the story of the great Heaven Hill fire? On November 7, 1996, a storm with gusts near 75 mph crossed Bardstown, and around 2pm one of Heaven Hill’s aging warehouses went up. Lightning is the suspected cause. The site was too destroyed to ever confirm it.
⠀
Warehouse I held about 20,000 barrels and was fully engulfed within 15 minutes. The wind carried the fire from rickhouse to rickhouse, and one neighboring warehouse went from 10 percent involved to 90 percent in under three minutes. Burning bourbon poured out of the buildings, ran downhill across the roads and into the creek that supplied the distillery’s water. A stretch of the creek was on fire.
⠀
Flames reached around 350 feet and were visible from more than 20 miles away. Firefighters could only cool the surrounding warehouses and wait for the fuel to burn out. Four of them had their helmets warped by the heat. Nobody was injured.
⠀
By the end, seven warehouses and the original 1935 distillery were gone, along with more than 90,000 barrels, which Heaven Hill puts at about two percent of the world’s wh***ey supply at the time. The loss was estimated at 30 million dollars.
⠀
Operations resumed the next morning and nobody lost their job. Brown-Forman and Jim Beam distilled for Heaven Hill while it rebuilt, and in 1999 it bought the Bernheim distillery in Louisville, where Evan Williams, Elijah Craig and the rest of its wh***ey is still made today. Aging and bottling stayed in Bardstown.

Have you ever heard of the Man in the Green Hat? For ten years of Prohibition, George Cassiday ran a bootlegging operation inside Congress.
⠀
It started in 1920 at DC’s Hotel Varnum, where a friend introduced him to two southern congressmen who had voted for Prohibition but wanted wh***ey anyway. Business grew by referral until a congressman suggested he move his stock into the US House Office Building itself.
⠀
He got a basement storeroom, a special knock for buyers, and by his own count ran about 25 deliveries a day, hauling supply from New York and Philadelphia in suitcases.
⠀
A 1925 arrest got him barred from the House side of the building. The press noted his light green felt hat, and the Man in the Green Hat was born. He moved to the Senate Office Building and sold for five more years, until a sting caught him in 1930 delivering six bottles of gin in the senators’ parking lot.
⠀
His sentence: 18 months, with permission to sign out of jail each night and sleep at home. He never spent a night in prison. Then he talked.
⠀
His five-part tell-all ran on the front page of the Washington Post days before the 1930 election, claiming 4 in 5 members of Congress bought his liquor. Supporters of the ban lost big at the polls, and Prohibition was repealed three years later. He never named a single customer, and when his wife got his confiscated black book back, she burned it.

What’s your favorite Bowmore release? Tell us below.
⠀
Bonus fact for the collectors: the Black Bowmore story gets stranger. The last two casks were losing so much to evaporation they were merged into one in 2002, then forgotten entirely until a stock check turned the cask up in 2014. It was bottled as a 50 year old at £16,000 a bottle.
⠀
And the Est. 1779 on the label? Tradition, not paperwork. The earliest documented licence dates to 1816, and wh**ky historians still argue about which Islay distillery is truly the oldest.
