Been a while since I’ve been here. Have made some strides. Plumbing is updated to current standards. Got the number for the main boss over inspections here in Franklin county since the regular employees decided I wasn’t important enough to deal with after countless calls. I have reached out to numerous businesses to try to collaborate with them in cooking foods and had what I believe is another successful contact today. Maybe I won’t be a conventional food trailer but instead a contractor for other restaurants while still getting to share my goods with those who could appreciate them. Hang tight. We’re in the home stretch.

Quick update. My plumber is extremely busy but he will get my plumbing fixed in the next couple weeks and that will be the last thing I need to get an inspection done. I can’t wait. I’ve been going nuts waiting but this circus will be mobile really soon. Thanks for keeping up and have a great weekend!!!

I told you all I’d be upfront in this process and I have some bad news.

As I was trying to get inspected I found out that an open air trailer isn’t eligible for a year long inspection tag according to the health department official I spoke with. Instead I’d have to pay for and get an appointment for inspection every time I want to set up.

As a new small business owner I cannot afford to rely on someone elses schedule as to when I can set up and on top of that pay $60 every time I want to set up.

With that said this isn’t the end for me. This is a bump. I am looking at other options to continue this journey to bring central Kentucky the best smoked food possible.

I am not made of money unfortunately so things like this hurt when they occur and slow progress but I won’t stop pushing ahead.

Thanks for all of the support and kind words from those who have reached out and asked me about this journey.

It’s not the end of the world. Pain brings gain.

A quick update! Going to call to schedule my trailer inspection for the end of this week. Last couple steps are falling in place for finalizing the little things. It’s been a slow process but it will be completed soon!!!

Hello everyone!!! My name is Jon aka NUKE. I want to share one of my passions with the people in my community and those surrounding me.

I am a couple weeks away from completing the process to get my trailer inspected and on the go. However once that is finalized and I have my certificates in hand I will be slinging smoked meats, a few selected sides and who knows what other wrinkles I may through in from time to time.

I will be posting here as I move forward with the last few steps of the processes needed to serve the community properly flavored smoked meats.

My goal isn’t to serve hundreds of people bland, dry and boring food. I’d rather serve dozens a high quality, properly seasoned, tender and juicy product until I run out for that day.

I am looking forward to seeing faces new and old.
