pLEASE READ ARTICLE BELOW!
Seriously!!! This is now happening. make sure your eating real “meat” buy local. All my meat is standing on my farm before I personally take it to the butcher! It’s getting crazy what they allowing now. Please ready below this is super important to know.

“ Lab-grown meat is FDA-approved.”

You’ve probably seen that headline.

But what exactly does that mean?

And more importantly, what actually goes into making cell-cultivated protein?

The process starts with a small biopsy of animal cells. From there, those cells are placed into a growth medium containing the nutrients and growth factors they need to multiply.

Historically, one major ingredient has been fetal bovine serum (FBS), which comes from fetal calves collected during slaughter. Because of cost, the irony of still needing biological animals and scalability, companies are working to replace FBS with alternatives such as recombinant growth factors, synthetic components and plant or algae-derived ingredients.

Then comes the scaffold, which provides structure for the cells to grow into something resembling muscle tissue.

And finally, the bioreactor, where temperature, oxygen, pH and other conditions are carefully controlled while the cells multiply.

So when you hear “lab-grown meat,” there is a LOT happening between that initial biopsy and the final product.

And then there’s the labeling question.

The FDA and USDA have different roles in regulating these products, and federal labeling standards have been an ongoing issue as states have started taking different approaches.

My biggest takeaway?

Don’t just read “FDA-approved” and stop there.

Understand the process. Understand the ingredients. Understand who regulates what. And understand what you’re actually buying.

Consumers deserve the full picture, whether you’re for cell-cultivated protein, against it, or simply trying to figure out what the heck it actually is.

WE’RE A FARM. NOT A GROCERY STORE. ❤️🐂🌾

Every once in a while somebody will message me:

“Do you have ribeyes?”

And I’ll say, “I’m out right now.”

“Do you have brisket?”

Not this time.

“What about filet?”

Sold out.

And sometimes I feel like I need to apologize.

Like somehow I’ve failed because somebody came looking for something and I couldn’t provide it that day.

But then I have to remind myself…

This is a farm.

Not a grocery store.

There isn’t a semi pulling up behind Dreamland every night unloading another pallet of ribeyes. 😂

Those steaks started with an animal standing in my pasture.

Before there was a ribeye, there was a cow.

There was breeding.

Nine months of pregnancy.

A calf hitting the ground.

There were bottles some nights, vaccines, minerals, hay, grass, pasture rotations, fence repairs, vet calls, drought worries and a whole lot of waiting.

Then processing.

Then cutting.

Then packaging.

And here’s the part people don’t always think about:

A cow only has so many ribeyes.

I can’t call the pasture and ask the next one to grow four extra because everybody wanted ribeyes this weekend. 😂

And when the ribeyes are gone, they’re gone until we process another animal.

Same with the filets.

Same with the brisket.

Same with everything else.

That’s what buying directly from a farm looks like.

Sometimes I have exactly what you’re looking for.

Sometimes I have something else you might absolutely love.

And sometimes you’re going to have to wait.

Our cattle are grass-fed and grass-finished.

That means I’m working with grass, weather, seasons and animals — not a factory production schedule.

Could agriculture produce things faster in other systems?

Of course.

There are all kinds of ways food is produced in this country, and large-scale agriculture has an important job feeding a whole lot of people.

But this is how we’ve chosen to raise ours.

And that means availability isn’t always convenient.

I’m learning not to apologize for that.

Because an empty spot in my freezer doesn’t mean this farm failed.

Sometimes it means somebody loved what we raised enough to buy the last one. ❤️

And sometimes a freezer full of ground beef but no ribeyes isn’t “nothing.”

Lord have mercy. 😂

There are YEARS of work represented in that freezer.

There are early mornings in there.

There are hay bills in there.

There are broken fences and muddy boots and sleepless nights in there.

There are cattle we’ve watched since they were calves.

There is land being maintained.

There is a local processor earning a living.

There is a family farm trying to stay a family farm.

There is food.

Real food, raised by somebody you can actually talk to.

So when you buy directly from a farmer, you’re getting something a grocery store can’t put on a shelf:

You’re getting a connection to the person who raised your food.

Ask me what my cattle eat.

I’ll tell you.

Ask me where they were raised.

I’ll show you the pasture.

Ask me how they’re handled.

I’ll talk your ear off. 😂

Ask me when I’ll have ribeyes again…

Well, that answer might be “not today.” 😂🥩

And I’m finally learning that’s okay.

Because my goal isn’t to make Dreamland look like a grocery store.

My goal is to keep Dreamland looking like a farm.

And I never want to become so worried about keeping every cooler full that I forget why we chose to raise food this way in the first place.

So if you come looking for something and we’re sold out, please don’t give up on us.

Ask what we DO have.

Try another cut.

Let me build you a box.

Or tell me what you’re waiting for and I’ll let you know when we have it again.

Because around here, availability changes.

Seasons change.

Animals grow on their own timeline.

But one thing isn’t changing:

We’re going to keep raising food in a way we’re proud to put on our own family’s table.

And we’re pretty proud to put it on yours too. ❤️🐂🥩
