Beets are back! 🫜 Beets are a new vegetable for many of our customers - even if they have had them in restaurants they usually haven’t tried cooking them. Beets are not only delicious, they have so many health benefits - they are high in antioxidants and known to reduce inflammation and lower blood pressure! Tip from our kitchen: don’t waste your time peeling them! The skin is not very noticeable and loaded with extra nutrients.

Our top five favorite ways to prepare beets:
1: Honey Roasted Beets
2: Steamed and served in salads
3: Pickled Beets
3: Fermented Beet Kvass
4: Pickled Beets
5: Roasted with carrots and onions and served with goat cheese

This weekend we celebrate 4 years of Carter! We’re so proud of the little man he is becoming. Back in 2021, we decided to start our farm, and found out a few months later that Elisabeth was pregnant. For us, the farm has been synonymous with the start of our family. When I’m facing farmer burnout or questioning our why, I remind myself that this kid is our why. Our farm has already impacted Carter in so many ways. We’re excited to see him take a more active role on the farm this coming year!
