Mediterranean-Spiced Lamb Kofta Skewers with Cool Garlic Herb Yoghurt Sauce
Ingredients:
For the Lamb Koftas:
1½ pounds ground lamb
1 small onion, finely grated
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
2 tablespoons fresh mint, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
½ teaspoon ground cinnamon
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
For the Garlic Yoghurt Dressing:
1 cup Greek yoghurt
1 garlic clove, finely grated
1 tablespoon lemon juice
1 tablespoon olive oil
1 tablespoon fresh mint, chopped
Salt and pepper to taste
For Serving:
Warm pita bread
Sliced cucumber
Cherry tomatoes
Lettuce leaves
Lemon wedges
Directions:
In a large bowl, combine the ground lamb, grated onion, garlic, parsley, mint, cumin, coriander, paprika, cinnamon, salt, and black pepper.
Mix thoroughly until all ingredients are evenly incorporated.
Divide the mixture into 8 equal portions and shape each around a skewer into long sausage-like koftas.
Refrigerate for 20 minutes to help them hold their shape.
Meanwhile, prepare the yoghurt dressing by whisking together the Greek yoghurt, garlic, lemon juice, olive oil, mint, salt, and pepper.
Cover and chill until ready to serve.
Heat a grill pan, barbecue, or skillet over medium-high heat.
Lightly brush the koftas with olive oil.
Grill for 8–10 minutes, turning occasionally, until browned and cooked through.
Transfer to a serving platter.
Serve with warm pita bread, fresh vegetables, lemon wedges, and the chilled garlic yoghurt dressing.
Garnish with additional herbs if desired and enjoy immediately.

Slow-Roasted Honey Mustard Lamb Shoulder with Garlic and Aromatic Herbs
Ingredients:
4 to 5 pounds lamb shoulder, bone-in
10 garlic cloves, peeled
3 tablespoons Dijon mustard
2 tablespoons whole grain mustard
3 tablespoons honey
2 tablespoons olive oil
2 teaspoons sea salt
1 teaspoon black pepper
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 cup chicken or lamb stock
1 large onion, sliced
2 bay leaves
Directions:
Preheat the oven to 300°F (150°C).
Pat the lamb shoulder dry with paper towels and place it in a large roasting pan.
In a bowl, mix together the Dijon mustard, whole grain mustard, honey, olive oil, salt, pepper, rosemary, and thyme.
Rub the mixture generously over the entire lamb shoulder.
Scatter the garlic cloves, sliced onion, and bay leaves around the lamb.
Pour the stock into the bottom of the roasting pan.
Cover the pan tightly with foil or a lid.
Roast for 4 hours, basting once or twice during cooking.
Remove the foil and increase the oven temperature to 425°F (220°C).
Roast uncovered for an additional 20-25 minutes until the exterior becomes golden brown and caramelized.
Remove from the oven and let the lamb rest for 15 minutes.
Shred or carve the lamb and serve with the pan juices.

Smoky Home Canned Baked Beans Better Than Bush’s Baked Beans
🛒 Ingredients:
• 4 pounds navy beans, rinsed and sorted
• 2 quarts tomato juice
• 1 quart tomato sauce
• 1 cup chopped onion
• 2 cups brown sugar
• 1/2 cup molasses
• 2 tbsp apple cider vinegar
• 1 tsp allspice
• 2 tsp ground mustard
• 1 tsp salt
• 2 tsp black pepper
• 1 tbsp smoked paprika (key ingredient)
• 1–2 tsp liquid smoke (hickory or mesquite)
• 1 tbsp Worcestershire sauce
• 1 tsp garlic powder
• 1/2 tsp onion powder
• OPTIONAL: 1–2 tsp chipotle powder or chopped chipotle peppers (for smoky heat)
👩‍🍳 Directions:
1️⃣ Soak & pre-cook beans
Boil → rest 1 hour
Simmer 20–30 min → drain
2️⃣ Make the smoky sauce
In a large pot, combine:
Tomato juice + sauce
Onion
Brown sugar + molasses
Vinegar
All spices
🔥 Smoked paprika + liquid smoke + Worcestershire + garlic/onion powder
👉 Simmer 5–10 minutes to develop flavor.
3️⃣ Taste & adjust (important)
Want more smoke? → add a few drops liquid smoke
Want BBQ vibe? → add 1–2 tbsp ketchup or a splash of BBQ sauce
4️⃣ Fill jars
Add 1½ cups beans per jar
Pour hot smoky sauce (leave 1 inch headspace)
5️⃣ Seal & process
Same as your original:
Remove bubbles, wipe rims
Pressure canner:
90 min (quarts)
75 min (pints) at 10 lbs pressure
