If you’re planning a big breakfast this weekend, don’t make the bacon an afterthought. Schott’s does theirs a little differently.

We start with Chairman’s Reserve pork belly, apply the cure directly to the meat, let it cure in the cooler for 10 days, and then smoke it for 10 hours. It’s a process that takes time, but that time is part of what gives the bacon its character. Grab it thin or thick depending on how you like it, and here’s a tip straight from the butcher: try adding a little brown sugar when you cook it.
