October 17 is National Pasta Day: what goes great with pasta (besides, of course, w**e)? Extra virgin olive oil! The team in Tuscany completed the 2026 olive harvest this week. The olives are carefully handpicked at peak ripeness and taken immediately to a local frantoio (olive mill), where they are cold-pressed to preserve freshness, aroma, and exceptionally low acidity. Be sure to grab a bottle next time you stop by the tasting room.

Pressed the final reds of the Texas harvest this morning. This Cabernet Franc and Cabernet Sauvignon spent three weeks on skins during fermentation and will now be transferred to oak barrels for aging.
Why the time on skins? This helps amplify color and concentration, creating the structure that will allow for long-term aging in bottle.
The upcoming time in oak will allow that structure to integrate as well as add subtle notes of toast and spice.
We can't wait to see how these w**es turn out!
