Something big is coming… 🍷🥂

We’ve spent years traveling through vineyards, sitting in barrel rooms, and tasting wines that stopped us in our tracks. We’ve always dreamed of sharing our experiences and passion for wine with others. For over ten years we have been able to share our personal project, Serrano Wine, with you. Now… we want to do even more.

This fall, our dream becomes a reality.

Highland House Wine Bar & Bottle Shop is coming to San Antonio’s King William Historic District.

This space will be a culmination of combined decades of studying and loving wine. Y’all already know we are going to go into this with the same intensity and Mamba Mentality that we take on every other project. You can expect a diverse wine list, with Serrano Wine as the house brand of course, joined by everyday favorites and hard-to-find cult wines. This place is meant to be a celebration of wine, the stories behind the bottles, and the community surrounding us.

Why “Highland House?” Well, Serrano is the Spanish term for Highlander… so it was only fitting.

Get ready San Antonio, we’re coming for you.

This is your captain speaking.
We’re expecting a bit of Turbulence ahead. Conditions may shift, the ride may feel unpredictable at times, but we assure you… we know where we’re headed!

Our second rendition of Turbulence is one of the new releases in our spring allocation. It is a non-vintage wine built from intentional blending rather than honoring a single moment in time. Tempranillo, Sagrantino, Marsanne, Roussanne, and Viognier come together from three different vintages and four distinct vineyards in Texas. Each component adds a unique layer to create something more complex than any one vintage could offer on its own.

Life rarely moves in a straight line. It’s shaped by change, by contrast, and by moments of uncertainty. This wine embraces that truth. The turbulence is real but so is the return to smooth flying.

The label artwork comes from a painting by my grandfather, whose work we use to tell the story of each wine we make. This piece captures movement, emotion, and the beauty found within disruption which makes it the perfect companion to a wine that celebrates the journey, not just the destination.

We have a cold Pibble here to tell you that she wants her parents home today so the tasting room is closed. Even if they could drive there, who would be coming in?? No, it’s better to stay home to cuddle. Willow out ✌🏼

Everyone stay warm and safe! We already see ice accumulating on tree branches, and it’s not even full freezing temps yet. Let’s pray our power grid holds strong and we make it to the other side of this weather event in one piece!

Our first two days in Champagne were all about differing opinions. To oak or not to oak, that was the question. And to be perfectly honest... we have enjoyed both!

Each Champagne house that we have visited has a different philosophy. Some will barrel ferment and barrel age before secondary fermentation in the bottle. Others will conduct their primary fermentation in stainless steel before aging in oak, or concrete, or amphora clay. Yet others will conduct all of the fermentation and aging in stainless steel before bottling.

Then once bottled, the wines will undergo secondary fermentation to make it bubbly. Some will age the bubbles for a few years, some will age 10+ years. Each winemaker has a different decision making process.

There's no right nor wrong in wine, and Champagne is a great example of how diverse yet inclusive the wine world actually is!
