3 hours into some boneless beef short rib burnt ends with a butterflied pork butt! Video coming soon!!

I did a small late night test cook last night with some boneless beef ribs (cut into bite sized burnt ends) and a bone in pork butt (debonedand and butterflied to cook faster) with a different set up on my fire management and the results were fantastic.

Hello everyone, it's been a very long time since I last posted on here and I sincerely apologize. I have not stopped BBQing nor will I ever. The past few month have been busy with plans with my wife, a career change and our toddler getting older. I've put this page on the back burner and have been waiting for the right time to come back, realizing the time is never going to be right I've decided to pull the plug and get back on this page and post weekly. Backyard cooks, parties and random cooking tips I have will be posted.

All my proteins will be purchased at a local butcher. Nothing online anymore unless you want it to be. I'm trying to keep everything 100% local this time like I originally planned

I'd say this was a successful test cook of some beef short ribs today. 7 hour start to finish cook. These will be added to the menu soon. Brisket and burnt ends "meat candy" are coming soon!!!

These came off the pit around 230am, have been wrapped in foil to finish and are currently resting in the oven just waiting to be pulled apart.

I am still taking orders for Hanna's benefit this weekend. Pick up will be around 1PM Sunday Oct 15th at Davis Hall in Davis IL. Remember all profits are going straight towards her and her family.
