LAMB SHANKS IN SWEET CHERRY WINE INSTANT POT STYLE.

INGREDIENTS

4 meaty lamb lhanks
1 onion chopped
2 cups baby carrots
6 garlic cloves smashed
2 potatoes diced
3 tablespoons tomato paste
2/3 cup sundried tomatoes chopped
1 cup of Masala/Sweet Sherry (any sweet fortified wine will do)
4 tablespoons knorrs beef stock cubes
4 sprigs rosemary, finely chopped

Instructions

Add ¼ cup olive oil to the Instant Pot. Using the display panel select the Sauté function.

When oil gets hot, brown the meat on all sides, 3-4 minutes per side. Meat will not be cooked through. Do not crowd the pot--you may have to work in batches.

Transfer browned meat to a shallow dish and cover loosely with foil.

Add onion, carrots, beef broth to the pot and Sauté until onions are soft 4 to 5 minutes.

Serve lamb topped with gravy alongside or on top of mashed white or sweet potatoes, or noodles or rice. Garnish with chopped parsley.

Crockpot Hot Toddy The perfect drink for your neighborhood Christmas cookie exchange. Or that romantic time in front of the fireplace.

It is best to start making this spicy, warming drink several hours before you plan to serve it, as most Crockpots can take time to come to temperature.

My little 4 quart slow cooker works great with this recipe and fits nicely on my table with the cookies and other deserts

Servings 12
Ingredients

4 quarts apple cider
8 herbal tea bags
1-2 inches fresh ginger, thinly sliced
4 cinnamon sticks
1/2 cup honey
2 lemons, sliced
3/4 cup cranberries or to taste
Pinch of salt
3 tablespoons sugar) or to taste

Instructions

Place water, tea bags, ginger, cinnamon, and honey in a crockpot on the highest setting Steep for 2 hours until hot.
Taste, if too sweet, add water. If hot Toddy is too sour, add water and little sugar or honey. When I was growing up, my Nona and Nono added a shot of something (it was their secret).Today, my family does not drink, so for us it is add apple cider or water...

Use a ladle to transfer into cups and add the lemons
