💫Autumn Olive Fruit Leather💫
1.) final product 😻
2.) add 5 cups berries
3.) + 1/2 cup water
4.) cover and heat until berries are soft or bursting
5.) use potato masher to mash berries
6.) bring to boil and stir continuously
7.) pour berry mash into food mill to separate juice from skins & seeds
8.) boiled seeds are infertile- discard, compost or feed to livestock of some kind
9.) juice
10.) juice yield was ~ 2 cups
11.) add 1/4 cup + 1 tbsp honey to juice
12.) pour onto parchment paper on top of dehydrator tray
12.) dehydrate on 140* F for 10 hours
13.) SLOWLY peel leather from paper
14.) look at that leather!😚 (whistle)
15.) final product
16.) quality control !
This was so fun! Something I’ve been talking about doing for years! We loved the texture and the flavor is unique but definitely not one our family minds. I’d consider adding lemon juice next time.
Autumn olives are invasive. I don’t recommend planting them, but if you have them, you can eat them!❣️
