Dinner time @ The Fluffy Flamingo🦩

Hubby wanted some beef ribs so I decided to make him some North Carolina BBQ Beef Ribs with a dry rub and made 2 sauces to go with: 1 vinegar based and 1 mustard based. He absolutely hit the spot for him.

For someone who doesnt eat meat, I love surprising everyone with my skills and knowledge of how to cook any meat well.

Tomorrow I am making Fijian Chicken curry.

Happy Tuesday from The Fluffy Flamingo 🦩
Today was a busy day in the kitchen for me.

For Dinner: Cornish game hen topped with rose harissa, pomegranate molasses, pickled onions and parsley served on top of yogurt with garlic and lime juice and roasted potatoes.

For Lunch: Andouille sausage served on a toasted brioche bun with mayo, grain mustard, pickled onions and pepperoncinis served along side roasted corn elote.

How was your weekend? At The Fluffy Flamingo 🦩 I cooked up a storm for us to enjoy with our best friend George and the playoffs.

- Vegetable chili with corn bread
- Baked Ziti with burrata and black truffle oil
- Coney island chili
- Cheese pupusa topped with black beans, cilantro lime rice, beef chorizo, egg and salsa verde and pancakes with banana and vanilla cinnamon maple syrup topped with whipped cream and blue berries
- Chicken pozole and onion quesadillas

And of course enjoyed some amazing champagne and tequila.

We both woke up starving and wanting two very different cuisines.

Made hubs chorizo with eggs, tortilla, mango salsa and some fresh avocado.

Me … I was craving shahi paneer with garlic naan and bondi raita.

We are stuffed till dinner!

Homemade indian food for the win tonight at The Fluffy Flamingo 🦩

- Kamal kakdi sabzi (lotus root)
- Mixed vegetable masala sabzi
- Coconut vegetable curry
- Garlic naan and basmati rice
- Served with 3 different kinds of pickle: sweet mango, garlic and loctus root

It really hit the spot. It was sweet, spicy, tangy and buttery.

Wednesday night with our kid and the littles. Made enchilada casserole with a ton of veggies and beans with homemade enchilada sauce. It came out cheesy and yummy. The littles loved it and thats all that matters!

Wine braised short ribs cooked low and slow for 5 hrs served with a baked potato.

This is an easy meal for weeknights for the whole family to enjoy.

What did you have for breakfast and lunch?

At The Fluffy Flamingo 🦩I made masala chai from scratch served with rusk and samosa chat served with homemade garbanzo curry, samosa, green chutney, tamrind and date chutney, pomegranate, fresh cilantro and ginger.

For lunch I made bhel puri with apples and pomegranate from my parents orchards in Cupertino.

These are some of my husbands favorite dishes.

The Fluffy Flamingo 🦩was busy making a scrumptious dinner for my two besties- Shelley and Salindra this past weekend.

Appetizer: fig crostini topped with homemade caramelized onions, goat cheese, toasted pine nuts with a balsamic reduction

Main course: saffron rice with dates, toasted shaved almonds and pomegranate molases served with harrisa lamb chops

Side dish: honey cayenne rainbow carrots topped with feta and crushed pistachios
