POT ROAST WITH POTATOES AND CARROTS

Ingredients
π₯© 3 lb beef chuck roast
π₯ 4 potatoes, quartered
π₯ 4 carrots, peeled and cut into chunks

1 onion, quartered
π§ 2 cloves garlic, minced
π§ 2 cups beef broth
πΏ 1 tsp dried thyme
π§ Salt and pepper to taste
Instructions
π₯ Preheat oven to 275Β°F (135Β°C).
π³ Sear roast: Heat oil in a Dutch oven and brown the roast on all sides. Remove and set aside.
π₯ Add vegetables: SautΓ© potatoes, carrots, and onions in the same pot for 5 minutes. Add garlic and cook for 1 minute.
π² Add broth and roast: Pour in beef broth and return the roast to the pot. Add thyme, salt, and pepper. Cover and cook for 3-4 hours, or until tender.
