Steak Bites with Caramelized Onions, Golden Fries & Salad
Seared juicy steak bites in a buttery garlic-onion pan sauce, served alongside crispy seasoned fries and a fresh garden salad. A satisfying bistro-style plate ready in 40 minutes.
Ingredients
700 grams frozen French fries
700 grams sirloin, ribeye, or rump steak, cut into large cubes
1.5 teaspoons salt, divided
1 teaspoons black pepper, divided
1 teaspoons smoked paprika
3 tablespoons olive oil, divided
2 medium onions, thinly sliced
3 garlic cloves, minced
2 tablespoons butter
1 tablespoons soy sauce or Worcestershire sauce
1 tablespoons lemon juice or vinegar (for sauce)
3 tablespoons fresh parsley, chopped, divided
1 small head green lettuce, chopped
2 tomatoes, diced or cut into wedges
1 tablespoons lemon juice (for salad)

Cook the fries: Cook 700 grams frozen French fries in the oven or air fryer according to package instructions, about 20–25 minutes

at 425°F (220°C), until crispy and golden. Season lightly with a pinch of 1.5 teaspoons salt, divided and 1 teaspoons smoked paprika as soon as they come out hot.

Season the steak: Pat 700 grams sirloin, ribeye, or rump steak, cut into large cubes completely dry with paper towels. Toss with 1 tsp 1.5 teaspoons salt, divided, ½ tsp 1 teaspoons black pepper, divided, 1 teaspoons smoked paprika, and 1 tbsp 3 tablespoons olive oil, divided. Let the steak rest and absorb the seasoning for 10 minutes

Sear the steak bites: Heat 1 tbsp 3 tablespoons olive oil, divided in a heavy skillet or cast iron pan over medium-high to high heat until shimmering. Add steak cubes in a single layer — do not move them for the first 5 minutes
05:00 Sear for 4–5 minutes total, turning to brown all sides. Remove from the pan and set aside.

Soften the onions: Add the remaining 1 tbsp 3 tablespoons olive oil, divided to the same pan. Add 2 medium onions, thinly sliced and cook over medium heat for 5–6 minutes

Build the pan sauce: Add 3 garlic cloves, minced and 2 tablespoons butter and stir for 30 seconds

until fragrant. Pour in 1 tablespoons soy sauce or Worcestershire sauce and 1 tablespoons lemon juice or vinegar (for sauce), scraping the bottom of the pan to lift all the caramelized bits into the sauce.

Coat the steak & finish: Return the seared steak to the pan. Toss to coat in the buttery onion sauce and cook for 1 more minute to your preferred doneness. Finish with half of 3 tablespoons fresh parsley, chopped, divided.

Dress the salad: In a bowl, combine 1 small head green lettuce, chopped, 2 tomatoes, diced or cut into wedges, remaining 3 tablespoons fresh parsley, chopped, divided, 1 tablespoons lemon juice (for salad), and a pinch of 1.5 teaspoons salt, divided and 1 teaspoons black pepper, divided. Toss gently just before plating so the lettuce stays crisp.

Plate & serve: On each large white plate, arrange the steak bites and onions on one half, the seasoned fries on the other, and the salad at the top. Spoon extra buttery pan sauce over the steak and finish with a scatter of fresh 3 tablespoons fresh parsley, chopped, divided.
Notes
Tips for the best result:
Dry the steak well: Patting the cubes completely dry before seasoning is the single most important step for a deep, caramelized sear — moisture steams instead of browns.
Don't crowd the pan: Sear in batches if needed. Overcrowding drops the pan temperature and leads to steaming rather than browning.
Don't move too early: Let the steak sit undisturbed for the first 1–2 minutes so it develops a proper crust before you flip.
Doneness guide: 52–57°C / 125–135°F = medium-rare; 60°C / 140°F = medium.
Lighter version: Reduce butter to 1 tbsp and add an extra squeeze of lemon for brightness.
Fries upgrade: Season with smoked paprika and garlic powder right out of the oven for extra flavor.
