So excited to see the newest addition to the Strata Varia portfolio, the Sea Stinger Picpoul, being served as nature intended; outdoors, sun shining, near water, and, most importantly, with local oysters!

Picpoul is an exciting up-and-coming variety in Washington State. French for "lip stinger", Picpoul's signature racy acidity makes it the ideal summer/shellfish wine. With the release of the 2025 Sea Stinger, Strata Varia has become one of a small but growing handful of Washington wineries producing this extraordinary variety!

Strata Varia is on the menu! We are excited to introduce the Sea Stinger Picpoul from Strata Varia. Talk about a perfect oyster wine made with the San Juan islands in mind. Thank you to Brent and Kate for this wonderful new addition on the westcott menu! Come on out and give it a try with some high beach sweets! Cheers 🥂

With the 2025 white wines and 2024 reds being blended and prepared for bottling, it’s time to share some of the super cool toys that we’ve been playing around with lately! In accordance with the name “Strata Varia” paying reference to varying layers of the Earth, we have been leaning hard into a variety of earthen fermentation vessels. In 2025, we added 3 new vineyards/varieties to our white wine portfolio. The 2025 Les Collines Picpoul and 2025 Corfu Crossing Grenache Blanc were both fermented in 85 gallon clay amphorae. The 2025 Crossfire Roussanne was fermented in a 180 gallon concrete egg. And the 2024 and 2025 Freewater Rocks Syrahs were fermented in both cylindrical and block-shaped concrete tanks. Can’t wait to begin sharing these wines this spring!
