Nikhil's Roti inspiration came from my son's discovery of sensitivity to gluten. Traditional North Indian wheat rotis were a staple in our household and one of few Indian foods he enjoyed. Unfortunately, he could no longer eat them anymore. This began my relentless quest and experimentation with gluten-free flours. The result of which is Nikhil's Roti, just the right blend of seven different glute

n-free flours. My goal was, and still remains, to create a tasty gluten-free alternative to the traditional Indian flatbread.
