Custard, Ice Cream, and Gelato (Italian Ice Cream) are all frozen desserts with differing amounts of milk, cream, sugar and eggs. Ice Cream has the most "over-run" or air content and thus is usually lighter and fluffier than custard or Gelato. Custard and Gelato are more dense, smooth, and creamy than ice cream because they have less air churned into them. This tends to give them a more intense flavor. They are also typically served at a warmer temperature, which makes the flavor seem to melt in your mouth. Gelato typically has less fat content than ice cream, and custard is similar but the difference is that is must have at least 14% egg and 10% fat to be considered a true custard. We can make any of these products, but love the creamy dense flavor of custard.
