I started baking as a way to maintain and regain brain skills that "jumped ship" as a result of a series of TIA's aka "spells". Through seeing holistic practitioners and learning about whole foods and the benefits they can have on a body with connective tissue diseases and flat out, just for everyone...my passion for eating, cooking, and baking organic whole foods was born. These last several years that I have been working to get my health and my life back taught me so many things about how foods work and how they don't work when we eat boxed, processed, foods full of chemicals and dies and harmful ingredients that can make even the healthiest person sick. Now, don't get me wrong, I am not an extremest, and when we need to eat Mac N Cheese after the game, we do it, but we largely eat organic, whole foods as much as we possibly can. Eating this way has been the single largest factor in getting me up and out of bed and giving me a quality of life I consider full and meaningful. This passion and bliss is what I bring with me into baking yummy, dare I even say healthy, baked goodies for you!
