Some close friends and I are putting together an event that you’re not going to want to miss! If you’re around Gainesville on August 15th we’d love to have you drop by! More details to come! And give the page a “Like/Follow” so you don’t miss any important announcements! 🔥 🔥 🔥

At Fire & Table, we want to honor every hand that touches the meal. That means celebrating the local feed stores and hay growers who nourish the animals, the producers and ranchers who raise them, the processors who prepare them, and the seasoning makers, smoker builders, and backyard pitmasters who bring the fire to life. We also shine a spotlight on the side makers, dessert designers, and beverage creators who complete the experience. Each part of the chain matters and each one will be highlighted, honored, and celebrated.

We believe something powerful happens when people gather around the fire. Stories get shared, neighbors become friends, and when everyone finally sits down at the table, that sense of community only grows stronger.

Fire & Table is more than an event, it’s a reminder that the best meals are built by many hands, and the best communities are too.

This year’s Fire & Table will bring together the full journey of Texas barbecue, from feed to flame to feast to friendship. Come meet the people behind the craft, taste the flavors of Cooke County, and be part of a community built the way barbecue was meant to be, slow, intentional, and together.

This past weekend, I cooked what was probably the best brisket I’ve ever made in 6 years of backyard BBQ.

The trim was right.
The seasoning was balanced.
The fire management stayed steady.
The bark set beautifully.
The tenderness was exactly where I wanted it.

Honestly… the whole process felt locked in.

The brisket was USDA Prime from Costco, and it absolutely delivered. But after the excitement wore off, I realized something strange:

It still wasn’t the best brisket I’ve ever eaten.

At first, that kind of bummed me out. But then it hit me — that’s actually a good thing.

Because if the process is finally getting dialed in, then maybe the next frontier isn’t technique anymore. Maybe it’s the beef itself.

That realization opened up a whole new chapter in my BBQ journey. Different ranches. Different producers. Different genetics. Different feed programs. Chasing deeper beef flavor one brisket at a time.

And look — as a backyard guy, I’m never gonna pretend I’m on the level of places like Goldee’s Barbecue or Panther City BBQ . Those guys are putting out some of the best brisket on planet earth. But that’s what makes BBQ fun. There’s always another level to chase.

So here’s to the next cook, the next experiment, and the next late night tending the fire.

Keep the fire going.

Flat iron doesn’t always get the spotlight—but it should. Especially when it’s from our friends at Lucky Cattle Company

It’s one of the most flavorful cuts on the animal. Rich, beefy, and when you cook it right, it eats way above its price. This one was seasoned simply with Texas Moe’s Prime Cur and grilled hot over pecan and Kingsford on the Santa Maria style grill. Live fire, a little smoke, and a good sear—that’s all it needs.

Cuts like this are why we’re lucky to have the ranchers we do here in North Texas. They’re raising quality cattle the right way, and it shows up on the plate. You don’t need to overcomplicate good beef- just treat it right and let it shine.

Honest. Simple. Done right.
