Fire & Table is almost here!

On August 15, the Gainesville Farmers Market will come alive with the sights, sounds, and smells of true Texas barbecue. From ranchers and meat processors to pitmasters, bakers, farmers, beverage makers, and local artisans, Fire & Table celebrates everyone who helps bring great food to the table.

Reserve your BBQ meal today and save! Purchase your BBQ plate in advance and save $5, or grab the BBQ Meal + Fire & Table T-shirt bundle and save $10 using the link below.

The market opens at 9:00 AM with brisket breakfast tacos and fresh hot coffee (available for purchase at the event). Wander through a thoughtfully curated market featuring over 30 local vendors, watch live-fire cooking demonstrations, enjoy live music, and spend the morning exploring the very best of the flavors of Cooke County.

Then around 11:30 AM, the smokers open and the barbecue starts flowing.

Come hungry. Stay awhile. Bring a cooler for fresh meat, a bag for local produce, and a basket for fresh bread and desserts. Most of all, bring your family, your friends, and your appetite.

Howdy Everyone! I can’t tell you how pumped I am for this event! It’s going to be an amazing day filled with amazing bbq, good friends, folks from the community, a curated vendor market (of which I’ll have a booth) and live music. At Fire & Table, we want to honor every hand that touches the meal. This past weekend, I cooked what was probably the best brisket I’ve ever made in 6 years of backyard BBQ.

The trim was right.
The seasoning was balanced.
The fire management stayed steady.
The bark set beautifully.
The tenderness was exactly where I wanted it.

Honestly… the whole process felt locked in.

The brisket was USDA Prime from Costco, and it absolutely delivered. But after the excitement wore off, I realized something strange:

It still wasn’t the best brisket I’ve ever eaten.

At first, that kind of bummed me out. But then it hit me — that’s actually a good thing.

Because if the process is finally getting dialed in, then maybe the next frontier isn’t technique anymore. Maybe it’s the beef itself.

That realization opened up a whole new chapter in my BBQ journey. Different ranches. Different producers. Different genetics. Different feed programs. Chasing deeper beef flavor one brisket at a time.

And look — as a backyard guy, I’m never gonna pretend I’m on the level of places like Goldee’s Barbecue or Panther City BBQ . Those guys are putting out some of the best brisket on planet earth. But that’s what makes BBQ fun. There’s always another level to chase.

So here’s to the next cook, the next experiment, and the next late night tending the fire.

Another great steak from another great local rancher .cattle.company They threw this one in for free in my last box. Seasoned up with a little , grilled over and cherry wood and BOOM- that’s all it takes!
