Quick Ribs in the instant pot. More detail in our stories.
First, remove the membrane from the back of the ribs.
Smother in your fav spice rub.
Place in instant pot(you’ll have to curl it around the inside and add 1 cup water.
I also added a few dashes of liquid smoke.
Set on Manual mode for 25 minutes.
Release pressure and carefully remove ribs to a sheet tray.
Pre heat grill or broiler.
Brush with BBQ sauce and place on grill or under broiler until surface caramelizes.
You can change this up using different flavor combinations in your spice rub or sauce.

Most meals I make are born out of using up a leftover ingredient or some ingredient I prepped beforehand as a big batch. Earlier this week, we smoked a big batch of Smoked Kailua pork. I divide it up and store it in the freezer. The first meal was BBQ pulled pork sandwiches. Tonight’s meal is Pork tacos. What would you make with it next?

I get Eggs Benedict for Mother's Day every year. It's a favorite tradition! My husband has become the master at Hollandaise and poaching eggs. It was great relaxing on the couch and hearing the kids help by toasting and buttering the english muffins. Do you have any special food requests for Mother's Day?

Happy Cinco de Mayo! 🇲🇽 We had Chimichangas and my homemade Quick Horchata.🥛
1/4 cup long grain rice
4 cups boiling water
1 cinnamon stick
-Let cool for about an hour
-Remove cinnamon stick and blend until completely smooth.
1/2 Cup sweetened condensed milk
2 scoops of ice
-Blend briefly to chill.
-Serve topped with a sprinkle of ground cinnamon.

Let's talk work flow. Look real close...Notice in these short videos how I'm working in batches? Im creating an assembly line as I go and streamlining the process, eliminating all unnecessary movements. I repeat the same cut until I've gone through the pile then move onto the next cut, going through the pile again. As I break larger pieces down into smaller and smaller pieces, I keep them in piles by my left hand so it can "feed" them into my knife.

Believe me...this comes in handy when you have cases and cases of produce to break down but it's also really nice for getting your meals quickly prepped for the week. Did you have a prep day this week?

A quick peek at how I do my prepped meal swap. I love freezer meals but I've been doing prepped meals instead for the last couple months and it has been amazing! Shrimp Tacos

1 lb. raw shrimp (peeled and deveined)
1 Tbl. Taco seasoning
1 tsp. Garlic powder
3 Cups shredded cabbage
½ bunch cilantro, chopped
Ground black pepper to taste
Corn tortillas

Sauce:
½ Cup plain yogurt, not fat free
¼ Cup mayo
1 lime, juiced
½ tsp. Taco seasoning
¼ tsp. Salt
Pinch of cayenne pepper
Ground black pepper to taste

Mix together shrimp, taco seasoning, garlic powder and pepper in bowl. Set aside
Mix sauce ingredients together and set aside.
Preheat skillet or saute pan on high and add shrimp. Cook until pink and just start to curl. Remove from heat.
Mix cilantro, cabbage, salt and a portion of the sauce, leaving the rest as a topping.
Build taco with shrimp, slaw and sauce. Serve with Rice.

Seasoned Rice:
2 Tbl Oil
2 Cups long grain rice
3 Cups water
1 packet Knorr Mi Arroz

Heat oil in sauce pot with lid over medium heat. Toast rice in oil until golden.
Stir in water and seasoning packet. Bring to a boil then turn heat to low and cover with lid.
Cook 20 minutes and fluff rice with a fork when done.
