✨ Watkins Brahmans Beef Recipe Spotlight – Osso Buco alla Milanese ✨

Looking for something special to cook for a date night, special occasion, or even just a cozy night in? 🍷 Osso Buco alla Milanese is an Italian classic that transforms beef shanks into an incredibly rich, comforting meal. Slowly braised with red wine, vegetables, and beef broth, the meat becomes fall-apart tender and full of flavor.
One of the things that makes Osso Buco so special is the rich bone marrow in the center of each shank. As it slowly braises, the marrow adds incredible richness and depth to the dish — and for many, enjoying the tender marrow straight from the bone is the best part!
🥩 What You’ll Need:
• 2–4 Watkins Brahmans Osso Buco
• Salt & pepper
• All-purpose flour, for dredging
• 2–3 Tbsp olive oil
• ¼ cup red wine
• 1 red onion, finely chopped
• 2 carrots, finely chopped
• 2 celery stalks, finely chopped
• 3–4 cups beef broth, or enough to cover the meat a little over halfway
• 2 Tbsp tomato paste
• 1 sprig fresh rosemary
🍲 How to Make It:
1. Season & Sear
Generously season the osso buco with salt and pepper, then lightly coat all sides with flour. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Brown the beef for about 5 minutes per side, then remove and set aside.
2. Build the Flavor
Pour the red wine into the hot pan and scrape up all those flavorful browned bits from the bottom. Add the onion, carrots, and celery and cook for about 10 minutes, until softened.
3. Braise
Stir in the tomato paste, then add the beef broth and rosemary. Bring to a boil, return the osso buco to the pot, cover, and reduce the heat to low. Simmer for 2½–3 hours, or until the beef is fork-tender and beginning to fall away from the bone.
🍽️ To Serve:
Serve over creamy risotto and finish with fresh gremolata for the perfect finishing touch. Don’t forget to spoon some of that rich braising liquid over the top!
🌿 Optional Gremolata:
Combine finely chopped fresh parsley, lemon zest, and a little minced garlic, then sprinkle over the finished dish. The freshness is the perfect contrast to the rich, slow-braised beef.
⏰ Prefer to let the crockpot do the work?
Season, flour, and brown the osso buco as directed above. Deglaze the pan with red wine, then sauté the onion, carrots, and celery. Transfer everything to your slow cooker with the tomato paste, and rosemary.
Add 2–3 cups of beef broth, or enough for the liquid to come most of the way up the sides of the meat. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until fall-apart tender.
