PSA: I have been getting a lot of phone calls and texts about our honey.
Due to the rainy season this year during the honey flow, our honey has a higher moisture content than we usually have. We like for our honey to be 18% water content or lower - the bees usually are good about this on their own. This year our honey is just over 19% and if you look at the honey, it seems to be thinner than normal. As the moisture content gets higher, it is thinner and traps air faster, which causes it to foam. If the moisture content gets higher than 20%, honey can start to ferment. Honey is hydroscopic, which means it likes to pull moisture in, that is why bees move air across the combs to dehydrate it to the right percent before capping it. Mother Nature saw to it that we needed more rain this year, so bees were not able to get it to the right percent before capping, which has produced our thinner honey. We have not added any thing to our honey and have taken measures to try to dehydrate it as much as we can. We are not a large commercial honey company that can afford a $21,000+ honey dryer, so we have been running a dehumidifier in the bottling room. We are doing the best we can to continue to provide you a good quality product.
