Gluten-Free English Muffins—Crispy Outside, Fluffy Inside
If you’ve been missing that signature chewy bite and nooks-and-crannies texture of a classic English muffin, this one’s for you. Made with Steve’s GF Bread Flour Blend, these gluten-free English muffins are soft, golden, and perfect for toasting.

Split them, slather with butter, or build your dream breakfast sandwich—they’re everything an English muffin should be, just without the gluten.

🥯 Ingredients
2¾ cups (396 g) Authentic Foods Steve’s GF Bread Flour Blend

1 packet (7 g) instant yeast

⅛ tsp (1 g) salt

¾ cup + 1 tbsp (180 g) warm water

¾ cup (170 g) warm milk

1 large egg

3 tbsp (42 g) melted butter

2 tbsp (24 g) light olive oil

Cornmeal, for dusting

🔧 Directions
Prep your pan:
Line a sheet pan with parchment paper and sprinkle generously with cornmeal.

Mix the dry ingredients:
In the bowl of a stand mixer, combine the flour blend, salt, and yeast.

Combine the liquids:
In a separate bowl, whisk together the egg, melted butter, olive oil, warm milk, and water.

Make the dough:
Pour the wet mixture into the dry mix and use the dough hook attachment on low-medium speed until a smooth, soft dough forms. Remove and knead lightly on a floured surface, then roll to about ½" thick.

Cut your muffins:
Use a round cutter to portion your English muffins. Place each round directly on the prepared sheet pan. Gather and re-roll scraps until all the dough is used. Cover loosely with plastic wrap and let rise in a warm spot until doubled—about 1½ hours.

Cook on a griddle:
Once risen, preheat your griddle to high. Spray with non-stick spray and place a few muffins top side down onto the hot surface. Cook for 5–7 minutes until golden, then flip and cook the cornmeal side for another 7–8 minutes.

Cool & enjoy:
Let cool completely on a wire rack before slicing or toasting.

Golden brown. Slightly crisp on the outside. Soft, chewy, and gluten-free on the inside. These are your new favorite morning ritual.

Dill & Garlic Gluten-Free Rolls

Bake up soft, fluffy rolls bursting with flavor using Authentic Foods Steve’s Bread Flour. These Dill & Garlic Rolls combine savory dill, garlic, and onion for the perfect side to any meal. Thanks to our gluten-free, protein-packed flour and the tangzhong technique, these rolls are moist, tender, and easy to make.

Recipe
Ingredients:

480g Authentic Foods Steve’s Bread Flour
12g Sugar, 6g Salt, 7g Yeast
2 Eggs, 280g Milk, 75g Water
30g Chopped Onion, 2 tsp Dill, 1 tsp Garlic Powder
Tangzhong:

25g Bread Flour, ¾ cup Water, 56g Butter
Method:

Tangzhong: Cook flour and water into a paste. Stir in butter. Cool.
Dough: Mix all ingredients, including tangzhong, and knead until smooth.
Rest: Chill dough for 30 minutes.
Shape: Divide into 100g balls, roll smooth, and place on a tray.
Proof: Let rise for 1 hour.
Bake: Brush with egg wash and bake at 370°F for 20–25 minutes.
Enjoy these rolls fresh from the oven, perfect for any occasion!

Pepita Cracker Recipe:
Ingredients

1 oz (2 tbsp) lemon juice
7 ½ oz (¾ cup + 2 tbsp) stock of any kind (we used chicken)
50 g (⅓ cup + 1 tbsp) Authentic Foods Steve’s Cake Flour
38 g (⅓ cup) tapioca flour
20 g (3 tbsp) brown rice flour
200 g (1 ¾ cups) pepitas (pumpkin seeds)
½ tbsp salt
¾ tsp ground cumin
Method
1️⃣ Preheat your oven to 350°F. Use a silicone baking mat or parchment paper to line a ½ sheet pan.
2️⃣ Mix all dry ingredients in a bowl: Steve’s Cake Flour, tapioca flour, brown rice flour, pepitas, salt, and cumin.
3️⃣ Stir in stock and lemon juice until combined into a thick batter.
4️⃣ Pour batter into the sheet pan and spread it evenly into a thin layer.
5️⃣ Bake for 30 minutes, or until the bottom is golden brown and edges are crisp.
6️⃣ Cool completely and break into rustic shard-like pieces.
