Saperavi is an ancient, hardy Georgian grape variety known for producing deeply colored, full-bodied red wines with high tannins and acidity, often compared to Cabernet Sauvignon. As a teinturier, its red pulp contributes to the wine's intense color. Saperavi is the most important red grape in Georgia, used for dry, semi-sweet, and sweet wines, and is also grown in other former Soviet republics and parts of the United States.

This robust, climate-adaptable varietal from Georgia could become a signature grape in the Finger Lakes. 🍷
