Mississippi is a control state — the state ABC is the only wholesaler of spirits here. Every bottle we sell, we buy from the state first. No direct deals, no going around the list.

So "everything" has real limits here, and that's fine by us. We'd rather stock the shelf tight with bottles worth having than wide with bottles nobody asks for twice.

Rum's legal definition is short: distilled from sugarcane juice, syrup, molasses, or other cane byproducts. That's it. No required country, no required aging, no required color.

That's why rum ranges from clear and light to dark and thick as syrup, made everywhere from Barbados to Louisiana to right here in the U.S. The Caribbean just does it best often enough that people assume it's the rule instead of the tradition.

Before hydrometers, distillers tested a spirit's strength with gunpowder — soak it, try to light it.

Weak spirits doused the powder. Strong ones let it burn with a steady blue flame. That flame was the proof: literal, visible proof the spirit was strong enough to sell. That's the whole origin of the word.

Today "proof" is just shorthand for 2x the ABV on the label. But it started as a fire test, not a formula.

Tequila is a mezcal. Mezcal isn't a tequila. Here's why.

Mezcal is the umbrella — any spirit distilled from agave, made almost anywhere in Mexico, from any of over 30 approved agave species, often smoked over an open pit.

Tequila is one specific mezcal: blue Weber agave only, made in five approved states (mostly Jalisco), no smoke. Stricter rules, narrower category.

So next time someone says "I don't do tequila, I only drink mezcal" — technically, they still do.

Mississippi grows w**e grapes. Always has.

The muscadine is native to the Southeast — it was growing wild here centuries before anybody stuck a vine in the ground in Napa. Thick skins, loves the heat, shrugs off humidity that would kill a French vine dead. The w**e it makes is sweet, bold, and tastes like nowhere else.

Muscadine w**e isn't trying to be Bordeaux, and it shouldn't. Serve it cold on a porch in August and it makes perfect sense.

Bourbon has to be made in the United States. Not because of tradition — because Congress made it a law in 1964. Your "Kentucky bourbon" could technically be made in Wyoming, Texas, or Mississippi. The only hard requirement is that it's American soil. The more you know.

You can make white w**e from red grapes. Most Ch*****ne is built on Pinot Noir — a red grape.

The color comes from skin contact, not the juice. Crush almost any grape and what runs out is close to clear. Leave the skins in the tank and the w**e picks up color, plus tannin — that dry, grippy feeling on your gums that reds have and whites mostly don't. Pull the skins early and you get white or rosé.

Same fruit. Same fermentation. One decision about skins.

While we're at it: most folks drink reds too warm and whites too cold. Put your red in the fridge for 15 minutes and take your white out 15 minutes before you pour. You'll taste more of both.
