About twenty-five years ago, I was this wide-eyed kid eagerly awaiting Santa's visit every Christmas Eve.
I remember wishing and hoping to catch a glimpse of him, thinking it would make our holiday just like those magical scenes on TV.
Growing up in the Philippines, our Christmas spread was pretty simple.
Having a cake on our table during the festivities felt like hitting the jackpot.
It wasn't until I hit eight that my aunt gave us a cake one Christmas Eve. Man, it felt like winning the lottery! That cake, surrounded by all the classic Filipino holiday treats, made our day.
Whenever I whip up those cakes now, those memories flood back.
They take me right back to when our family celebrated Christmas together, surrounded by joy and laughter.
Sometimes, it's a mix of smiles and a touch of nostalgia, especially when distance keeps me from my folks.
But you know what? Those memories drive me. They push me to create these special cakes, hoping they'll become a part of someone else's holiday memories.
Even though I'm miles away, I find comfort in thinking that my bakes might bring a slice of joy to someone else's Christmas table.
And you know what keeps me going? The dream of someday baking a cake for my own family on Christmas and New Year's Eve.
To recreate those heartwarming moments of togetherness and joy, just like it was when I was a kid.
Until then, each cake I bake carries that heartfelt wish, a sweet promise to make future celebrations just as special as those cherished memories from years gone by.
