Meet our local mushroom producers, Hells Canyon Mycology, based right here in the Lewis-Clark Valley! 🍄

We recently had the chance to tour their lab and get a behind-the-scenes look at how their mushrooms are grown. Mycology is such a unique world, and it was fascinating to see the process up close and learn what a day in the life of a mycologist looks like!

Meet our microgreen growers! 🌱

Just outside the Lewis-Clark Valley in Gifford, Idaho, CJ & Ryan Kalysten grow a variety of fresh microgreens for our restaurants.

Don’t let their size fool you! These tiny greens are nutritional powerhouses, containing 4 to 40 times the concentration of vitamins, minerals, and antioxidants compared to their fully grown counterparts.

You can enjoy their locally grown microgreens featured in dishes at Mystic Cafe, Zany Graze, and Main Street Grill as part of our commitment to supporting local growers and bringing the freshest ingredients to your table.

Just hidden away in the Lewiston Orchards is one of our incredible local partners, Jessica from Klein Ventures! 🥚🐓

Every week, her happy hens produce 15 dozen fresh eggs for Happy Day Local. Those eggs are then delivered to our restaurants and made available through our retail shop, bringing truly local food straight to our community.

These chickens spend their days with plenty of space to roam, resulting in beautiful, nutrient-dense eggs we’re proud to serve.

A huge thank you to Jessica for opening up her farm and giving us a closer look at where our food comes from. Supporting local producers like her is what Happy Day Local is all about!

We’re kicking off a new series at Happy Day Local to introduce you to the farmers, ranchers, and producers who help feed our communities right here in the Valley.

In today’s video, we had the opportunity to tour Green Pastures Farm with the Neufeld family and see firsthand how they raise their chickens. Their flock produces approximately 15 dozen eggs each week for Happy Day Local, which are then distributed to our restaurants.

The chickens are raised using rotational grazing, a farming practice that allows them to regularly move to fresh pasture. Not only is this one of the highest standards of care for the birds, but it also improves soil health and strengthens the pasture over time.

We believe food tastes better when you know the people behind it. Thank you to the Neufeld family for showing us where our eggs come from! 🍳
