Peacock Wine Bar in Gilbert will launch a series of monthly wine classes with sommelier Darla Hoffman, owner of wine education and marketing company About Wine in AZ, at 5:30 p.m. Wednesday, June 23.

In the first class “Describe That Wine,’’ Hoffman (pictured) will lead the class through tasting exercises, then take it through four completely different wines and demonstrate the characteristics of each and how to recognize them.

She also will decode professional wine reviews and help class participants find what they like.

Dry cooking sherry lasts longer than other types of wine, but it isn't invincible. The better the wine, the faster you should use it, and in most cases, it should be refrigerated after opening.
