This was quite possibly the best brisket I have ever done. It was tender and juicy. It could have been a touch smokier but that’s the trade off of Hot and Fast.

I had originally planned to smoke a brisket overnight last night, due to the storm I changed it up and decided instead of low and slow to go hot and fast today. I heated the smoker up to 350° with oak pellets and added a water pan for moisture. I ran her for 2 hours and 45 minutes until the internals hit around 160°. Once they did I wrapped in butcher paper and put into an aluminum pan with broth, Worcestershire and butter and let it roll until 203° internal. I rested for 2.5 hours then served. Total cook time was 5.5 hours.
